Chicken Taquitos

Who doesn’t enjoy chicken taquitos? They are great for any occasion! Parties, picnics, a movie night, football match, a food-to-go, or just a quiet dinner with the kids. You name it, chicken taquitos can be there.

This all-in-one, is so popular that you can find them in many groceries and supermarkets among the frozen sections. They are very easy to prepare. But it will be a lot healthier if it’s homemade, right? Of course, it is. Because you know what’s in those rolled tortillas. And you know when it’s prepared. They are always fresh when you make them yourself.

When you are a mom, things you need to do usually don’t happen as planned. In the end, you’ll need to hurry up. Lunch or snacks or dinner are also compromised. That’s why, I’ll tell you, these chicken taquitos will be so handy in these situations. Because you can keep them in the refrigerator, then just reheat them. When suddenly you become so busy and you only have a short of time to cook some meals or snacks for the kids and yourself, get those taquitos and reheat them… voila!

Having a party or some gathering? Prepare these taquitos ahead of time, and just reheat them in the oven to get them crispy once you need them. See?

I like preparing these as well, when we have some movie or TV series marathon.

How to store the chicken taquitos?

You don’t need to pre bake these if you are making them for a later date. Make the chicken and roll them up and place them in a freezer bag.

There are two ways you can store them. To refrigerate and to freeze.

To refrigerate, as soon as they are completely prepared and baked, let them cool down to room temperature. Then transfer them in a ziplock plastic bag, large enough for the chicken taquitos, or use more than one. You can also use a large, clean plastic container with a cover. Refrigerate for up to 2 days.

To freeze, as soon as they are completely prepared, arrange the chicken taquitos on a baking sheet, and then place them in the freezer. Chill the taquitos until frozen. Transfer the chicken taquitos to a ziplock plastic bag and place them back in the freezer.

To reheat, preheat your oven to 325 °F.

For the refrigerated chicken taquitos, you can immediately bake them for 10-15 minutes, or until heated through. 

For the frozen taquitos, thaw them (about an hour). Bake them for 10-15 minutes, or until heated through. 

Serve immediately and enjoy!

Making the Chicken Taquitos

Here’s how you make them. By the way, for the chicken meat, you can use any type of chicken meat. Personally, I prefer meat from the chicken thigh.

  • 12 pcs Flour Tortillas
  • 2 Tbsp Tomatoes, (skin and seeds removed) finely chopped
  • 2 Tbsp Red & Green Bell Pepper, chopped
  • 1 – 1 1/2 Tbsp White & Red Onion, chopped
  • ½ cup Cream Cheese softened
  • 1 cup Cheddar Cheese, shredded
  • 2 cups Cilantro
  • 2 cups Chicken thigh meat
  • Romaine Lettuce leaves (optional)

Chicken Thigh marinade

  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Salt & Pepper
  • 2 Tbsp Butter

Instructions

Preheat the oven to 350°F

Marinade chicken meat in a mixture of garlic powder, onion powder, salt, pepper, and butter for at least 15 minutes. Place in a baking pan.

Bake marinated chicken meat for about 20 minutes. Cool down, then cut into big strips. Set aside.

 While preheating the oven and baking the meat, line a baking sheet with foil and lightly coat with cooking spray.

In a large bowl, mix together tomatoes, red and green bell pepper, red and white onion.

Heat tortillas in the microwave oven until just warm. This will prevent them from cracking while rolling up the taquitos.

At this time, the chicken is already cooked and sliced.

Layer the tortilla with the vegetable mixture, then arrange the chicken meat over the veggies. Top with cream cheese and then the grated cheese. 

Roll the tortillas and arrange them on the baking sheet with the seam side down. Repeat with the other tortillas.

Bake for 15-20 minutes or until tortillas start to turn golden brown.

Serve warm. Lettuce can be added to the warm taquitos, if desired.

  • 2 cups Chicken legs, deboned
  • Romaine Lettuce leaves (optional)

Instructions

  1. Preheat the oven to 350°F
