This easy Cranberry Salad is a dish my mom came up with when I was a teenager. She and her friends were always trading recipes and trying something new on the dinner table. My mom’s friends all loved this recipe so much that they all started using it for their Thanksgiving dinners. And thus, a legend was born. Ingredients for Mamma’s Famous Cranberry Salad
- 2 T mayonnaise
- 2 T granulated sugar
- 1 can jellied Cranberries
- 1 small can crushed pineapple (drained)
- 1/2 cup nuts (chopped), optional
- 1 cup Whipping Cream
- 1 t Vanilla extract
- 1/2 cup Powdered Sugar
- Red food coloring
- 1 crushed graham cracker, for garnish
How to Make Mamma’s Famous Cranberry Salad
- Whip cream, add powdered sugar, red food coloring, and vanilla. Set aside.
- Let cream cheese sit on counter until it reaches room temperature.
- Place cream cheese in medium mixing bowl and cream.
- Blend in mayonnaise and sugar.
- Remove a handful of cranberries from the jelly for garnishing later.
- Add cranberries, pineapple, and nuts.
- Fold in whipped cream mixture.
- Pour into a 9 x 13 cake pan.
- Sprinkle crushed graham cracker over the whole thing in an artfully kind of fun way.
- Place your handful of cranberries that you saved for garnishing on top of the salad.
- Refrigerate at least 2 hours (overnight is better).
- Serve, or just let it take a decorative stance on the table. Heh.
