I am just in LOVE with this easy recipe for vegan and gluten free nice cream. And the fact that it's Zombie Ice Cream?! Genius.

I am going to be blatantly honest with you–I’m working on putting together a book of zombie recipes.

Yep. Working hard at making recipes for zombies so that, when the apocalypse comes, I won’t be on the menu.

Best to be prepared that way. (I can’t stop giggling.)

One of the top recipes in the book? Oh, definitely my Zombie Ice Cream {Vegan & Gluten-Free Rootbeer Float Ice Cream}.

Sure, it’s like a regular ice cream I’d eat anytime, but it’s special for the zombies, I promise.

Why would I make recipes special for just the zombies, you might ask…why don’t I want to be on the menu, I might counter.

I just don’t want to be eaten.

It’s a simple, well-known fact that zombies are hungry (or as my two-year-old says it hunry), so I figure I’ll feed them.

If they’re too full from eating Zombie Ice Cream, maybe they won’t eat me–or my kids. Would kind of like my kids to be spared, too…

Best case scenario is that the zombies are too full to stuff any bites of me in their mouth.

But, maybe if they are just at least slowed-down a little while burying their face in the Zombie Ice Cream…I don’t know.

I don’t feel like I have a lot of options here, y’all.

They’re seriously hungry and I just have to feed them something that isn’t me (or my kids–ok, my husband, too…).

Alright, all kidding aside, this Zombie Ice Cream recipe is super easy and would be a fun addition to a Halloween party.

That’s why I was making it–a little try-it-out-before-you-make-it-for-a-party.

Zombie Ice Cream {Vegan & Gluten-Free Rootbeer Float Ice Cream}

Zombie Ice Cream {Vegan & Gluten-Free Rootbeer Float Ice Cream}

Total Time: 10 minutes

Zombie Ice Cream {Vegan & Gluten-Free Rootbeer Float Ice Cream}. Sure, it's like a regular ice cream I'd eat anytime, but it's special for the zombies.

Ingredients

  • 2 cans coconut milk, refrigerated overnight
  • 2 cup powdered sugar
  • ½ tspn vanilla extract
  • 1/2 tspn rootbeer flavoring
  • 1/3 cup sprinkles, I used heart sprinkles and chocolate jimmies
  • 10-12 drops green food coloring
  • 1 cup mini-gummy worms
  • More sprinkles--all the sprinkles--for topping

Instructions

  1. Open your coconut milk cans and scoop the thick cream part into a bowl, trying to get as little of the coconut water as possible. Discard coconut water or just set aside for chugging later, whatever.
  2. Add the powdered sugar.
  3. Mix on high 2-3 minutes with a hand mixer until it becomes stiff and fluffy.
  4. Split mixture into two bowls.
  5. Add vanilla to one bowl and rootbeer flavoring to the other.
  6. Add 6-8 drops of food coloring to one bowl and 4-6 in the other.
  7. Stir by hand until coloring is consistent throughout.
  8. Add half of the sprinkles and half of the gummy worms to each bowl (leaving about 5 gummy worms left over).
  9. Stir by hand gently.
  10. Place in a freezer-safe container in dollops, then kind of stir together, just a tad so that the two greens swirl together a little.
  11. Drop the remaining gummy worms on top.
  12. Pop it in the freezer for 2 hours.
  13. Scoop and enjoy.
