When I say I’m making another Unicorn ANYTHING, everyone in the house immediately starts getting excited… Just by that word “unicorn”! Ridiculous, I know, but they love the colors, the combination of bright shades and the over-the-top-ness.
Blondies are similar to like brownies except that they’re not chocolate – like a brownie but not brown. The texture, moistness, and flavor complement each other so well.
Adding the colorful sprinkles on top of the already colorful cookie spikes the goodness. That makes this Unicorn Blondies a great snack for everyone.

How to Make the Unicorn Blondies
Making the Unicorn blondies is quite easy.

To make this delicious treat, have these ingredients ready:
- 2 cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- ⅔ c melted unsalted butter
- 1 ½ c brown sugar
- 2 eggs
- 1 ½ tbsp vanilla
- ½ c white chocolate chips (paid links)
- food coloring – neon colors work best; pink, purple, blue
- Rainbow or unicorn sprinkles
When you have everything ready, the first thing you do is to preheat your oven to 350°F. Then grease a 9×9 or 8×8 baking pan, or line it with parchment paper.
In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt.
Combine melted butter, brown sugar, eggs, and vanilla with a mixer until just combined.
Pour wet ingredients into the dry ingredients and then combine with a mixer.
Remove about ⅓ cup of batter per color you are using and then put each scoop in individual smaller bowls.
Drop 3-4 drops of food coloring in each of the smaller bowls of batter and then mix with a fork until evenly combined.
Distribute the confetti chips into each bowl of batter then put spoonfuls of each batter in the baking dish, putting the different colors and plain batter in a pattern.
Swirl the colors together in the pan until they are combined to make a rainbow effect and also top with rainbow or unicorn sprinkles.
Bake for 25-35 minutes (an 8×8 pan will take a little longer)
NOTE: The colors will be lighter after the blondies are baked so put a drop more food coloring than you think you will need when mixing your colors.
