Easy Frito Pie Recipe – Classic and Delicious

I just bought myself a big bag of Fritos! And I like this one with the original flavor. Umm, no. I’m not going to eat this… yet. OK… I’ll munch on just a piece. I enjoy the crunchy sounds actually! But this is going to be more delicious if I turn it into this easy Frito Pie!

By the way, this is different from my Frito Chilli Pie but they are both amazingly delicious.

This classic Frito Pie is believed to have originated in Mexico before it became popular in the US. It was also said that this recipe started in the late 1940s or early 1950s by someone from the Frito Corp. Another version of this story said that this Frito Pie was invented in the 1960s from New Mexico.

Either way, whoever started this is a genius or a really good cook. I wonder what inspires them to create this recipe. 

Well then, Frito Pie has been around already for quite some time. Several decades actually. I’m sure most of you know that Fritos came around in the 1930s. Ever since then, Frito Pie has a lot of versions.

How to Make the Easy Frito Pie

I’ll talk about this easy Frito Pie recipe. I know this is going to be very delicious as I am using healthy ingredients here along with the Fritos. 

Easy Frito Pie Recipe

Starting with the fresh ground beef that you’ll need to brown over the skillet, then set aside. This brings out its natural juice and flavor. Using the same skillet (don’t wash so that the flavor of ground beef lingers over), add the olive oil. and saute onion, then garlic, and then place back the ground beef. Hmmm, that smells good already.

At this time, you can preheat your oven to 350℉,

Back to the skillet, you can add in the seasonings, Ensalada sauce, and the other ingredients listed below, except the Fritos and Cheese. These healthy ingredients like fresh tomatoes, black beans added to the already enticing flavor.

Finally, arrange the Fritos in a casserole dish, spread the cheese, and cooked ground beef on top then place in the oven and bake for only 20 minutes.

Ingredients:

  • 1lb ground beef
  • 1Tbsp olive oil
  • 1 small onion, diced
  • 1 cup red enchilada sauce
  • 3 cloves garlic, smashed and sliced
  • 1Tbsp taco seasoning
  • 1 cup corn
  • 1 cup black beans
  • 1tsp Cajun seasoning
  • 1 cup diced tomatoes
  • 1 bag Fritos
  • 3 cups shredded cheese

Directions:

Brown the ground beef in a skillet over medium heat.

Scoop the ground beef into a clean bowl and add the olive oil to the pan.

How to make Frito Pie

Once the oil is hot, add the onion and cook until translucent, about 3 minutes. Add the garlic and cook for one minute before adding the ground beef back into the pan.

How to cook Frito Pie

Preheat oven to 350F.

Add the seasoning to the skillet, along with the enchilada sauce, corn, black beans, and diced tomatoes. Cook for 2-3 minutes.

Meanwhile, spread half the bag of Fritos along the bottom of a 9”x16” casserole dish. Top with 1 cup of shredded cheese.

Scoop the skillet mixture over top of the cheese layer, then top with remaining Fritos and shredded cheese.

Bake for 20 minutes, until cheese is melted.
