Well. Now it’s done. You’ve read it. And now see the results.

But before we do that–this is a no-judging recipe.

You are not allowed to judge. I have 2 toddlers.

And they’re nuts. And I’m tired. And NO. JUDGING. ALLOWED.

This simple taco recipe idea came about because of my two hoodlums. Have I told you they like tacos?

Well, they do.

And they like them so much, that sometimes, I get kind of bored with the traditional tacos I make.

Not that the Authentic Mexican Tacos or Steak Street Tacos are boring.

But you get hollered at to make tacos fifty-four times in a week and you don’t get creative…I dare ya.

So, yeah, I got a little crazy one night. Pulled out all the stops.

And, also, I might have been feeling a little lazy.

Because, let’s get to the nitty-gritty here, I’ve been asked fifty-four times in a week to make freakin’ tacos.

That’s like fifty-three times too many. And if I wasn’t blonde, my hair would be grey. Because of the asking.

WHY DOES THE ASKING NEVER STOP?!

This. This is what being a mom is.

Needing a recipe for Stupid Simple Fish Tacos just to save sanity. I get it now.

And I know you get it, too. That’s why you’re here. Because you need this piece of sanity, too.

Um, seriously?! Why the heck didn't I think of this before?! It's so simple and fast. I NEEED Fish Taco Night in my life.

Ingredients

• 1 box fish planks or sticks, frozen - DO NOT JUDGE
• 1 large tomato
• 1 cup shredded lettuce
• 1/2 cup mozzarella cheese, or whatever cheese you can find
• 3-5 crispy taco shells
• Feeling crazy? Add in some basalmic vinaigrette...mmm...

Instructions

1. Follow the directions for cooking the fish. I chose to do the microwave directions because that's faster and stops the asking sooner.
2. Slice tomato into chunks.
3. Break the fish into chunks and stuff into the taco shells with bits of tomato and lettuce and top with cheese.
4. Serve. Do anything to stop the asking...
