Fresh pineapple can be used if it’s in season. Just make sure to cut away from the core. Tip to keep these from melting if serving at a party is to place them on a tray full of ice. It will keep them from melting too fast while your trying to serve them.
I use the Zoku Classic Pop Mold because it really works the best for me. The way that you can lightly run the outside under warm water and separate the popsicle. I like that the handles are stiff. Pineapple Coconut Nice Cream Pops
- 1 can coconut milk
- 1 can pineapple
- 1/2 cup water
- Place coconut milk in back of fridge for one day until the milk separates from the water.
- Drain water. Place coconut milk, water, and pineapple in blender. Puree for 2 minutes.
- You may add sugar if you like otherwise just pour into the mold. Freeze for 3 hours minimum.
