Fresh pineapple can be used if it’s in season. Just make sure to cut away from the core. Tip to keep these from melting if serving at a party is to place them on a tray full of ice. It will keep them from melting too fast while your trying to serve them.

I use the Zoku Classic Pop Mold because it really works the best for me. The way that you can lightly run the outside under warm water and separate the popsicle. I like that the handles are stiff. The container is bright and well made. They also have several different molds like the space, safari, round, and mini. The even have a quick maker which is also worth looking into. But classic works perfect for me. Maybe some key lime pops!

Yield: 6 pops

Pineapple Coconut Nice Cream Pops

Prep Time: 10 minutes
Cook Time: 3 hours
Total Time: 3 hours 10 minutes

Ingredients

  • 1 can coconut milk
  • 1 can pineapple
  • 1/2 cup water

Instructions

  1. Place coconut milk in back of fridge for one day until the milk separates from the water.
  2. Drain water. Place coconut milk, water, and pineapple in blender. Puree for 2 minutes.
  3. You may add sugar if you like otherwise just pour into the mold. Freeze for 3 hours minimum.
