The are fresh with pineapple and coconut milk. How could you go wrong?
Cool down with Pineapple Coconut Nice Cream Pops by the pool. Having a Moana party? Serve these up instead of cake for dessert. Mom’s with love you cause it just has the natural sugars it comes with. No added sugar outside of the coconut milk and canned pineapple.
Fresh pineapple can be used if it’s in season. Just make sure to cut away from the core. Tip to keep these from melting if serving at a party is to place them on a tray full of ice. It will keep them from melting too fast while your trying to serve them.
I use the Zoku Classic Pop Mold because it really works the best for me. The way that you can lightly run the outside under warm water and separate the popsicle. I like that the handles are stiff. The container is bright and well made. They also have several different molds like the space, safari, round, and mini. The even have a quick maker which is also worth looking into. But classic works perfect for me. Maybe some key lime pops!
Serves: 6 pops
- 1 can coconut milk
- 1 can pineapple
- ½ cup water
- Place coconut milk in back of fridge for one day until the milk separates from the water.
- Drain water. Place coconut milk, water, and pineapple in blender. Puree for 2 minutes.
- You may add sugar if you like otherwise just pour into the mold. Freeze for 3 hours minimum.
