This is part of a master plan of taking over the world with toffee. Wait–did I just say that out loud? No, I just wrote it down on a gigantic billboard of sorts on the internet….oops. Oh, well, now the proverbial cat is out of Schrodinger’s box, bag, and into the fire…wait…(Have I confused the issue enough for you to forget about me taking over the world with toffee yet? Good.) Ah, so, you’re here because you want to know how to make some Vegan Toffee, right? Because, if you’re like me, you thought it would totally be easy. Well, I’ll be honest, it was not. I mean, it was easy once I figured it out–but before then, well, let’s just say that my husband is sick of hearing me say, “Gosh, darn it! I burned another batch.” Sadly, many cups of sugar were sacrificed to bring you this recipe. But, happily, no Bothans. Whew.
Please let me say, first, before we go much farther, that this is truly just one piece of a bigger puzzle coming together–so check back later in the week for some ideas for using this magical material known as toffee.
Also, I am not some genius that just came up with this recipe for vegan toffee. I normally come up with my recipes kind of on a “shoot from the hip” thing. But this time, with so little success on my own, I broke down and headed over to The Vegan Crew to find out how to make this treat. I feel terrible for re-blogging it, but it is slightly different, so, just know that I have good intentions. I just wasn’t able to pull-off originality on this one. (truly many cups of sugar died in the attempts to make this on my own…poor sugar).
Ingredients for Vegan Toffee
- 1 cup granulated sugar
- 1 cup Earth’s Balance non-butter buttery spread business (mmmm….)
- 2 tspns vanilla extract
- 1/2 tspn salt
How to Make Vegan Toffee
- Cover a baking sheet with a sheet of wax or parchment paper. Set aside.
- Place all ingredients into a small pot over medium heat.
- Stir.
- When it’s all melty, keep stirring.
- Stir. Stir. Stir. Stir. Stir. Stir.
- Forever, stir.
- And some more.
- When it turns a soft brown, keep stirring.
- Ok, if your arm falls off, you can totally take a break–to re-attach the arm, then keep stirring.
- Stir while it’s boiling.
- Stir for about 20 minutes.
- Then pour it on the pan with the parchment paper.
- Allow it to cool for at least 2 hours.
- Break it into a thousand pieces.
- Eat. (or add it to other magical things that are about to come your way…)
