I don’t like Saturday morning breakfasts to be boring around my house. Honestly, we totally have more fun as a family if we’re shakin’ things up with our meals. So, trying to be an awesome mom, I decided we would do a breakfast of Dairy-Free & Eggless Chocolate Waffles. Don’t worry, I got your back, you can totally be cool like me (uh, right…), because I wrote the recipe down. Well, ok, so maybe, if I’m honest, being cool has nothing to do with the making of chocolate waffles, it has everything to do with, well, me being a little nerdy. I mean, really, I could have just made plain waffles and I’m sure the whole family would have been a-ok with that, maybe even excited, dare I say, but no, I had to take it to the next level…see, I’m nerdy. Yeah me. Heh.
But wait! There’s more…you might want to make a double batch, because these awesome vegan chocolate waffles are just step one in a recipe that is totally coming your way later in the week: Vegan Choco Tacos. Oh, hells yeah, baby, it’s ON.
Ingredients for Eggless Chocolate Waffles
- 2 cups all-purpose flour
- 1 cup aquafaba (heh, bean juice)
- 1 3/4 cup coconut milk
- 1/2 cup vegetable oil
- 1 tblspn sugar
- 4 tspn baking powder
- 1/4 tspn salt
- 1 tspn vanilla extract
- 1 cup vegan chocolate chips
How to Make Dairy-Free & Eggless Chocolate Waffles
- Preheat waffle iron.
- Preheat oven to lowest setting.
- Mix dry ingredients together in a medium mixing bowl, except for chocolate chips.
- Mix wet ingredients together in a medium mixing bowl.
- Add dry ingredients to wet and mix thoroughly until batter is smooth.
- Microwave chocolate chips in the microwave in 30-second increments, stirring every 30 seconds, until all the chips are melted.
- Add chocolate to batter and mix until chocolate is dispersed evenly.
- Place 1 spoonful in each waffle form.
- Remove from the waffle iron when steam visibly reduces.
- Place in warm oven and make another waffle.
- Continue until all the batter is done.
- Garnish with additional chocolate chips, whipped cream, syrup, butter, cinnamon, sugar, ANYTHING! LOL!
