I think I’m strawberry-obsessed. If you look back through the recipes I’ve put out on NerdyMamma, you’ll see there’s a pattern. Every few days or so, there’s something with a freakin’ strawberry popping-up (especially during their growing-season). I can’t even eat them without getting a rash, but somehow they keep ending-up on my plate. Man, I love a good strawberry. And the only thing better than a strawberry is something random that tastes like strawberries. So, allow me to introduce the most awesome waffle I’ve ever made: the Eggless Strawberry Waffles. Yes, they are flavored like strawberries. You are totally allowed to make a double batch and save some to put in the freezer so you can munch on them during the week (that’s what I did) and then you can always have a little strawberry waffle in your life. I feel like such a weirdo sometimes. But I’m a happy weirdo. Heh.
Ingredients for Eggless Strawberry Waffles
- 2 cups all-purpose flour
- 1 cup aquafaba (heh, bean juice) – you can just use the amount of juice you get off one can, it doesn’t have to be an exact cup
- 1 3/4 cup coconut milk
- 1/2 cup vegetable oil
- 4 tspn baking powder
- 1/4 tspn salt
- 1 tspn vanilla extract
- 1/4 cup strawberry syrup (paid link) (you can make your own or just use store-bought, that’s what I did)
How to Make Eggless Strawberry Waffles
- Preheat waffle iron (paid link).
- Preheat oven to lowest setting.
- Mix dry ingredients together in a medium mixing bowl.
- Mix wet ingredients together in a medium mixing bowl.
- Add dry ingredients to wet and mix thoroughly until batter is smooth.
- Place 1 spoonful in each waffle form.
- Remove from the waffle iron when steam visibly reduces.
- Place in warm oven and make another waffle.
- Continue until all the batter is done.
- We tossed this awesome non-dairy butter on top with some maple syrup, but, since I won’t be coming to your house to check and make sure you made your waffles exactly like mine, you’re welcome to put on it whatever you want. I mean, really, it’s your breakfast, break-out some chocolate chips or fresh strawberries; maybe some whipped cream or even cream cheese. Anything would be so yummy on these.
