Lately, my life seems to be a crazy-mish-mash of “hurry-up and wait”. If it’s not a rush to get to some kind of family event, it’s sit-for-three-hours-and-stare-at-a-wall. And, for some odd reason, its like the rushy-times and the times I need to put dinner on the table are colliding like a freight train and a tornado. Just unacceptable. So, I came up with this ridiculously quick 3-Ingredient Chicken Tortilla Soup recipe. I literally went from “no idea what to eat tonight” to “dinner’s ready” in less than 10 minutes. And I spent 5 minutes of that staring at the potential ingredients filling my pantry. This is so fast–and yummy–it’s kinda ridiculous that I never thought of it before. Hope you enjoy.
Ingredients You Need to Make Chicken Tortilla Soup
- 1 can chili beans
- 1 can diced tomatoes
- 1 can chicken meat

How to Make Chicken Tortilla Soup
- Open all the cans.
- In a medium dutch oven, place the chicken meat.
- Break-up the meat with a spoon to desired chunkiness.
- Turn on the heat under the dutch oven to low.
- Immediately add chili beans and diced tomatoes.
- For added fun, you can slice an avocado to drop on top with a dollop of sour cream and a jalapeno. Or just add some salt and pepper. Whatever. Heh.
How to Make this Chicken Tortilla Soup ROCK
Ok, so this recipe is totally fine by itself, but if you want to really make this thing take-off and rock your tastebuds, here’s what I suggest.
- Use the crock pot and let the soup simmer for about an hour.
- Add a 1/2 cup of sauteed onion and 1 tblspn of garlic to the soup.
- Add a second can of chicken and about a cup of chicken broth.
- Add a can of tomato sauce.
- Absolutely slice that avocado and drop it in right at the table.
- And go ahead and add some tortilla chips at the table, too.
- Oh, and get some shredded cheese to top it off–that’ll kill.
I kid you not, this is so yummy, I kinda want a bowl now (even though I JUST had this for dinner last night).
