I've heard of edible cake batter, but this recipe for edible brownie batter is amazing. Gluten-free, eggless, dairy-free...it hits all the good places!

The other night, I’d just finished putting babies to bed, and my freakin’ sweet tooth got up and punched me in the face. I want chocolate, it said. Stupid sweet tooth. Made me get all worky-worky in the kitchen. I came up with this awesome Eggless Edible Brownie Batter Dip (mostly because I was too lazy to actually bake–it was LATE!). Amazing. Freakin’. Sweet tooth. It always has the best ideas…

Now, I need to think of ways to make this even more scrumptious…like by sandwiching it between cookies? Ooohh…or making ice cream…mmmm…so many possibilities. That I will share with you as I make and enjoy, of course.

Ingredients for Eggless Edible Brownie Batter Dip

  • 1 cup oat flour (or, you can be super-lazy like me and just use the baby-food oatmeal…)
  • 1/2 cup granulated sugar
  • 1 tspn vanilla
  • 2 tblspn coconut oil
  • 1/2 cup water
  • 1/2 tspn salt
  • 1/2 cup vegan chocolate chips

Now, here’s the deal, you can make this with regular flour. It still tastes brilliantly awesome and you’ll want to stuff your face with it until you puke, but the thing is, supposedly, you can get sick from eating uncooked wheat flour. Now, if you want to make your own oat flour so you don’t have to worry about dying from some strange un-cooked wheat disease that no one’s ever hear of, you can just throw some old fashioned oats into the blender (ok, you can probably use instant, but I don’t have any so, there) and run it for a couple of minutes until the oats are broken into tiny nothing dust. Should be pretty straight-forward. If it’s not, I’m sorry, but you can always run it through a sifter if your blender can’t blend it well enough. So, that’s my oat flour advice for the day…

How to Make Eggless Edible Brownie Batter Dip

  1. Mix all the dry ingredients together in a medium bowl except for the chocolate chips.
  2. Mix all the wet ingredients together in another medium bowl.
  3. Mix dry ingredients into wet ingredients in 1/3 cup increments. Or, if you’re impatient, like me, just dump everything together.
  4. Blend until batter is smooth.
  5. Place chocolate chips in a small bowl and microwave in 10-second increments, stirring every 10 seconds, until the chocolate is completely melted and smooth.
  6. Add melted chocolate chips to the cake batter and stir until mixed thoroughly.
  7. Begin consuming by the spoonful. End by licking the bowl clean. That’s what I did–Lol!
