I’m always excited about the Christmas Season. Not only because it’s the season for giving, but it’s also the season to make those delicious and colorful recipes, too. Just like these delicious Fruitcake Cookies!

For many years, Fruitcake has been one of my favorites. The blended tastes and textures of fruits and nuts right in your mouth make it awesome.

What about our today’s recipe, the delicious Fruitcake Cookies? I can say, it’s a mini version of the Fruitcake. These Fruitcake Cookies may not be exactly the same as the cake but the chopped glace cherries and pecans made it to my list of favorites. 

This Fruitcake Cookies recipe that I am sharing today is very easy. You can even change or add dried fruits and nuts, too. Well, you’ll have to if the glace fruit are not available. Or if you’d like to use up those extra glace fruits and nuts from the last time you made your delicious fruit cake.

Moreover, these can be enjoyed by everyone, because you don’t need to add bourbon or rum to it. That’s why I get to enjoy these cookies with my kids.

Here are the ingredients for your Delicious Fruitcake Cookies

  • 1/2 cup shortening
  • 1 cup brown sugar
  • 1 egg
  • 1/4 cup milk
  • 1 3/4 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pecans (mix of chopped and whole ideally)
  • 1 1/2 cups chopped glace cherries or mixed fruits

 Directions:

To start, get a large bowl and place shortening and brown sugar together, and beat with an electric mixer for 2 minutes or until light and fluffy.

Followed by adding the egg and milk, and then beat to combine thoroughly.

In a separate small or medium bowl, whisk together the flour, baking soda, and salt.

Then, add half of these dry ingredients into the shortening mixture. You must combine them fully. Then add the remaining half and beat until combined. Do not overmix.

Stir in the pecans and glace cherries, or mixed fruit if you added it, into the batter.

You may use a small cookie scoop to portion out the cookie dough equally, then carefully place them on a flat container or tray and refrigerate for at least 1 hour.

Preheat oven to 400°F and remove cookie dough from the fridge.

Arrange the cookies on a parchment or silicon mat lined cookie sheet carefully spacing the cookies about 2″ apart.

Now place the cookies in the oven, middle rack, after the oven is up to temperature, bake for 8-10 minutes until the cookies are golden brown. Allow cookies to cool for one minute on the cookie sheet before moving to a cooling rack.

You may serve them within minutes once cooled down, or place them in a well sealed container and refrigerate or freeze to be served later on.
