  • 75g (2 1⁄2 eggs/ 5 tbsps approx) egg whites
  • 70g (1/3 cup) white sugar
  • 90g (1 cup) almond flour
  • 80g (2/3 cup) powdered sugar
  • green food coloring
  • edible sugar pearls for decoration

For the topping (white chocolate ganache or whipped cream)

  • *whipped cream is used for this recipe*

White Chocolate Ganache

  • 3/4 cup white chocolate
  • 1⁄2 cup cream
  • 2 tbsp soft butter

Whipped Cream

  • 1 cup cold heavy cream
  • 3 tbsp powdered sugar

Instructions

  1. Preheat the oven to 140C (280F).
  2. Before you start, get all of the ingredients ready. Prepare a large piping pastry bag, fitted with a large round tip. I use a Wilton 10. Set aside.
  3. Line a baking tray with a silicone mat.
  4. Wipe a medium bowl with vinegar to make sure it’s clean and dry enough.
  5. Sift the powdered sugar and almond flour together. This is a crucial step for even macarons.
  6. Place a bowl over a pan with barely simmering water. Add the sugar and egg whites to the bowl.
  7. Stir sugar and egg whites with a spatula until it reaches 50C (120F) and sugar melts. Take it off the heat.
  8. Use a hand blender or stand mixer with a whisk attachment. Start whisking the mixture on low for about 3 minutes, then gradually start increasing the speed to medium-high. Whisk until stiff peaks are formed for like 4-5 minutes. Meringue should look glossy.
  9. Pour the sifted powdered sugar and almond flour into the stiff meringue.
  10. Start folding gently forming a letter J with a spatula.
  11. Stop folding when the batter is glossy and has a thick and flowing consistency. You don’t want your batter to be too runny so be careful not to over-mix.
  12. Add the green food coloring.
  13. Transfer the batter to the piping bag. The piping tip is Wilton 10.
  14. Pipe round-shaped macarons in 5 different sizes using a template under.
  15. Let macarons dry for up to 1 hour until they are completely dry on top. Drying time will depend on the environment.
  16. Bake macarons for 17 minutes at 140C (280F).
  17. After baking, open the oven door and let them stay inside for 15 minutes before taking them out.
  18. Let it cool on the baking mat. When shells are cooled, completely remove them from the baking mat and pair them with similar sizes.
  19. Between Macaron shells, whipped cream or white chocolate ganache can be used.

For the White Chocolate Ganache:

  1. Prepare the ganache; In a small pot, heat the cream but do not boil. Take it from the heat and add chocolate and butter. Whisk it until everything is completely blended. Let it stay in the fridge until it’s set.
  2. Pipe ganache between each macaron shell and press lightly.
  3. Decorate with edible pearls.

For the Whipped Cream:

  1. Using a stand mixer fitted with a whisk attachment or a hand blender, whip the heavy cream and powdered sugar on medium-high speed until stiff peaks form, about 3–4 minutes.
  2. Pipe whipped cream between each macaron shell and press lightly.
  3. Decorate with edible pearls.
