The Season is just around the corner and the excitement of everyone is evident. Starting with making a list and checking it twice. Oh, no! Not finding out who’s naughty and nice. That’s for Santa Claus! What I am trying to say is making to-do lists. Such as what gifts to give to the people we care about.

I would make a list of what we will have for our Christmas dinner. One that I truly like to prepare is the Christmas Red Velvet Snow Globe Cupcakes. They are so perfect for Christmas because of the snow globe Christmas designs on the cupcakes.

Not only are they so pretty to look at, but also delicious, soft, and moist. They are red velvet cupcakes! For sure everyone will enjoy those cupcakes. I remember my Mason Jar Snow Globes I made before. I think they are nice to have them paired together.

Making the Snow Globe Cupcake is enjoyable and very rewarding. If you’ve been baking cakes already, this recipe can be so much easier. For a beginner, don’t worry. There’s nothing complicated here. 

To begin with, have all the ingredients ready.

In making this Christmas Red Velvet Snow Globe Cupcakes, there are 3 parts:  First is for the red velvet cupcakes, then the second is for the Cream Cheese Frosting, and the third is for the Gelatine Snow Globe.

Note: You need to make the Gelatin Snow Globes a day ahead with because they will need to dry for 24 hours before you use them.

Christmas Red Velvet Snow Globe Cupcakes recipe

For the Red Velvet Cupcakes, you’ll need:

  • 1 large egg
  • 1 cup (200 g) sugar
  • 2/3 cup (160 g) buttermilk
  • ½ cup (120 g) vegetable oil
  • 2 tbsp (30 g) yogurt
  • 1 tbsp vanilla extract
  • 1-2/3 cups (210 g) flour
  • Pinch of salt
  • ½ tbsp (7.5 g) baking soda
  • 1-1/2 tbsp (10 g) cocoa powder
  • 1 tbsp red food coloring (Add little by little!)

To make these Red Velvet Cupcakes, have your oven preheated to 180°C / 355°F, and place the paper cupcake cups in muffin molds.

Mix the egg, sugar, yogurt, buttermilk, vegetable oil, and vanilla extract in a large bowl.

Snow Globe Cupcakes

Sift the flour, cocoa powder, pinch of salt, and baking soda. Then add these dry ingredients to the egg mixture and stir with a spatula. Be careful not to over mix.

Add the gel red food coloring little by little. And then divide this mixture into the cupcake cups and bake for 20 minutes.

Snow Globe Cupcakes

Before removing the cupcakes from the oven, test with a toothpick. When you remove the toothpick, it should come out clean or with a few crumbs. Let the baked cupcakes rest for 15 minutes to cool down before adding the frosting.

 For the Cream Cheese Frosting, you’ll need:

  • ½ cup (115 g) butter (room temperature)
  • 1 cup (120 g) cream cheese (room temperature)
  • 2 ½ cups (300 g) powdered sugar
  • 2 tsp vanilla extract

To make this frosting, using a (paid links) hand mixer or stand mixer, beat together the butter, vanilla extract, and cream cheese until it gets smooth, then add the powdered sugar a cup at a time and mix for 3 minutes.

Then, place the frosting in a piping bag (paid links and decorate them as you wish.
Cover and place in the refrigerator.

For the Gelatin Snow Globes, you’ll need:

  • 14 sheet (28 g) gelatin (paid link)
  • 5 tbsp cold water
  • 15 water balloons
Snow Globe Cupcakes

To make these Snow Globes, first, soak gelatins in cold water for 5 minutes, squeeze the excess water of gelatins, and then put them in a saucepan. 
Next, pour 5 tbsp of cold water over it, then stir on the stove until it melts (do not overheat!)

Inflate the balloons. Cover all balloons about 2/3 of the way from the smooth end to the balloon opening with gelatin and let them dry for 10 minutes. Then, cover all the balloons again.
Let the gelatin dry on the balloons for 24 hours. After it has dried, pop the balloons and remove them from the gelatin globes.

Finally, decorate your cupcakes with edible toppers (paid link). You can purchase the toppers, or make your own. Add the dried gelatin snow globes and enjoy! These Red Velvet Snow Globe Cupcakes make great gifts for teachers, friends, and family!

Ingredients

  • FOR THE CAKE:
  • 1 large egg
  • 1 cup (200 g) sugar
  • 2/3 cup (160 g) butter milk
  • ½ cup (120 g) vegetable oil
  • 2 tbsp (30 g) yogurt
  • 1 tbs vanilla extract
  • 1 cup + 2/3 cup (210 g) flour
  • Pinch of salt
  • ½ tbsp (7.5 g) baking soda
  • 1 tbsp + 1/2 tbsp (10 g) cocoa powder
  • 1 tbsp red food coloring (Please add little by little!)
  • Colorful marzipans
  • FOR THE CHEESE CUPCAKE FROSTING:
  • ½ cup (115 g) butter (room temperature)
  • 1 cup (120 g) cream cheese
  • 2 cups + ½ cup (300 g) powdered sugar
  • 2 tsp vanilla extract
  • FOR THE GELATINE SNOW GLOBE:
  • 14 sheet (28 g) gelatin
  • 5 tbsp cold water
  • 15 water balloons

Instructions

For the Cupcakes:

  1. Preheat the oven to 180 C / 356 F
  2. Place the cupcake sheets to muffin molds
  3. In a large bowl mix the egg, sugar, yogurt, buttermilk, and vegetable oil and vanilla extract.
  4. Sift the flour, cocoa powder, pinch of salt and baking soda
  5. Add the dry ingredients to the mixture and stir with spatula (do not over mix!)
  6. Add the gel red food coloring little by little.
  7. Divide the mixture to the cupcake sheets 
  8. Bake for 20 minutes in the oven. Before removing the cupcakes from the oven, test with a toothpick or a knife. If the middle is dry take out from the oven.
  9. Rest for 15 minutes to cool down.

For the Cheese Cupcake Frosting:

  1. Beat the softened butter, vanilla extract and the cream cheese until it gets smooth.
  2. Add the powdered sugar and whisk for 3 minutes
  3. Then, take the frosting to the piping bag and decorate them as you wish.
  4. Keep in the refrigerator.

For the Snow Globe Gelatins:

  1. Soak gelatins in cold water for 5 minutes
  2. Squeeze the excess water of gelatins and put them in a saucepan. 
  3. Pour 5 tbsp of cold water over it.
  4. Stir on the stove until it melts (do not overheat!)
  5. Inflate the balloons. 
  6. Cover all balloons with gelatin.
  7. Let it dry for 10 minutes. Then, cover all the balloons again.
  8. Let it dry for 24 hours.
  9. After it dried, pop the balloons and take it off from the gelatins.
  10. Decorate the colorful marzipans as you wish.
  11. Combine all the decorations to the cupcakes.
