You have to have the best Easter egg sandwich when it comes to using those leftover Easter eggs. I mean unless you like to pickle them which is NOT my thing. This sandwich is a great way to use those eggs up after Easter. This recipe is great for lunch or making an easy night for dinner. We all know how crazy spring can be, so save yourself a little time and don’t let those eggs go to waste.
I think my family looks forward to these sandwiches just about as much as they look forward to the coloring of eggs. What do you like to make with your egg leftovers? The Best Easter Egg Sandwich
Ingredients
- 4 hard boiled eggs
- 1/2 teaspoon salt
- 2 slices of bread; toasted
- 2 tablespoons real mayo
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika, optional
Instructions
- Cut up the hard boiled egg and place it in a bowl. Mix in salt, pepper, and mayo. Stir well.
- Toast the two slices of bread and top one slice with the egg mixture. Once done you may top with paprika if you would like. Add the next piece of bread and cut in half. Serve!
If your not an egg fan, think of donating some sandwiches to those in need. This is a great way not to throw out food and help those in need. Bread isn’t all that expensive either! Have a hoppy Easter!
