I love a little burger in my summertime. Or, rather, I love a little summertime with my burger. Heh. Burgers are just one of my very favorite dishes. Easy, fast, and so customizable, they’re like the dinner you can make a million times and I will never say “no”. And one of my VERY FAVORITE recipes comes from Martin’s Savory Recipe Center, the Sweet ‘n’ Southern Burger. I usually make it with Mexican Street Corn–because Burgers + Corn = Love. Heh.
One of the best parts about this awesome burger recipe is the peachy sweetness. I mean, the burger itself isn’t sweet (because that might be a little off-putting if you’re not ready for it). But the Sweet ‘n’ Southern Burger is topped with this awesome peach salsa…there’s the sweet…mmmm. I think the last time I made them, I may have topped my Mexican street corn with the salsa, too. Just sayin’.

Sweet ‘n’ Southern Burger with Mexican Street Corn
Sweet 'n' Southern Burger with Mexican Street Corn
Mexican Street Corn is an easy side for any BBQ or burger. Best summer side ever.
Ingredients
- 4-6 ears of corn, in husk
- 2 tblspn butter
- 1 tblspn salt
- 1/2 tblspn pepper
Instructions
- Preheat your oven to 375-degrees.
- Place ears of corn on the bottom rack of the oven for 20 minutes.
- You can rotate them halfway through, but I’ve forgotten to do that before and there were no negative repercussions. LOL!
- Remove corn from the oven and carefully (CAREFULLY) remove the husks.
- Discard husks.
- Rinse corn in cool water to remove any remaining silk.
- On a plate, melt your butter in the microwave for approximately 30-seconds.
- Mix salt, pepper and melted butter.
- Roll each ear of corn in the butter mixture.
- Serve.
