Alright, so, earlier in the week, when I admitted to making the mistake of buying the kiwis in bulk? I wasn’t joking. I have like 20 left. My whole house is starting to smell like kiwi…and mint. I don’t know what possessed me. LOL! But, that having been said, these Mint & Kiwi Popsicles turned out to be pretty awesome. And, a huge perk, you don’t have to eat them immediately. Nope. They can live in the freezer for much longer than their fresh counterparts that will slowly wilt on my counter. So, nice way to preserve my savings, right? My husband thinks I’m crazy. Probably am. Heh.
In all seriousness, though, if you end up with a plethora of pretty much any fruit (because I hate to tell you this, but this is NOT the first time I’ve over-bought at the bulk goods store), you can totally turn them into popsicles with this handy-dandy recipe. I mean, there’s nothing to it. Just find some good popsicle forms–that’s my big tip of the day. Because the popsicle forms make all the difference.
See, like all fruit-heavy popsicles, these Mint & Kiwi Popsicles are a little fragile around the edges, so you need a good popsicle form (like a cup or a set like this, which I have in my kitchen but had already used today–because I made more of my Vegan Roothbeer Float Popsicles) to set them. Because floppy forms will not work. Period. Something stiff-sided only. Like a cup–this doesn’t have to be difficult, just stiff, you know, hard. LOL!
Anyway, I’ll stop being intentionally obtuse and let you get to the recipe–that’s what you’re here for anyway, right?! LOL!
Mint & Kiwi Popsicles
Mint & Kiwi Popsicles
These Mint & Kiwi Popsicles turned out to be pretty awesome. And, a huge perk, you don't have to eat them immediately. Nope. They can live in the freezer for a LOOONG time! LOL!
Ingredients
- 16 kiwi fruits
- 2 sprigs of fresh mint
- 2-3 tblspns water
Instructions
- Cut off the caps of your kiwis.
- Using a spoon, scoop out the center of the kiwis, placing the meat into your blender or food processor.
- Drop mint and 1 tblspn of water into the blender with the kiwi meat.
- Crush, puree, and blend until it's smooth. Shouldn't take long.
- This is the hard part...Pour into the popsicle forms.
- Place in the freezer for about 3 hours. Or overnight. Whatever.
- Remove and feed to your favorite kiwi-loving kiddos! Or adults. Adults enjoy them, too. Heh.
