So, I thought I was being this awesome mom the other afternoon, making a big-ole Gluten-Free Vegan Brookie Piezookie. I made it so that EVERYONE in the family could eat it. So it’s dairy-free, egg-free and gluten-free. And I cut a big slice for my teen and popped it on the table in front of him. He looked-up from his video game for all of a half-second and raised an eyebrow. Then he went back to the game. Like just didn’t even pick-up the fork. At first I was a little insulted. A little hurt…but then…I found out better…
I’m not really sure what I expected. I mean, he’s got an attitude the size of Texas. But maybe some happiness? Excitement? Eating some of it immediately? I don’t know. I DO know that the plate was CLEAN, like downright not a speck on it clean. And I think he got up in the night to polish-off the last few slices that the rest of the family didn’t eat. So, maybe I was kind of awesome, after all. I probably won’t ever know if that’s what he was thinking. Or if he ever thinks that. But I do know that I really enjoyed the gluten-free vegan brookie piezookie. I mean, what’s not to love?! I wanted to make another one the next day, but was all out of oats. So, I had to go with another dessert. But that was ok, too. Heh.
Gluten-Free Vegan Brookie Piezookie
Gluten-Free Vegan Brookie Piezookie
So, I thought I was being this awesome mom the other afternoon, making a big-ole Gluten-Free Vegan Brookie Piezookie. I made it so that EVERYONE in the family could eat it. So it's dairy-free, egg-free and gluten-free.
Ingredients
- Cookie
- 3/8 cup packed brown sugar
- 3/8 cup granulated white sugar
- 1 tsp vanilla
- 1/2 tsp salt
- 2 tblspn coconut oil, melted
- 2 cups oatmeal
- 1/2 cup dairy-free chocolate chips, homemade or some of that store bought stuff, either way…but one day I’m going to make a recipe for some made with chocolate liqueur, so keep an eye-out for that
- Brownie
- 2 cups oatmeal
- 1/2 cup granulated sugar
- 1 tspn vanilla
- 2 tblspn coconut oil, melted
- 1/2 tspn salt
- 1/2 cup dairy-free chocolate chips
Instructions
- Preheat oven to 350-degrees.
- Grease a medium-sized cast iron skillet. Set aside.
- To make the cookie dough, mix all the dry ingredients together in a medium bowl except for the chocolate chips.
- Mix all the wet ingredients together in another medium bowl.
- Mix dry ingredients into wet ingredients in 1/3 cup increments. Or, if you’re impatient, like me, just dump everything together.
- Blend until batter is smooth.
- Fold-in the chocolate chips until mixed thoroughly. Set aside.
- To make the brownie batter, mix all the dry ingredients together in a medium bowl except for the chocolate chips.
- Mix all the wet ingredients together in another medium bowl.
- Mix dry ingredients into wet ingredients in 1/3 cup increments. Or, if you’re impatient, like me, just dump everything together.
- Blend until batter is smooth.
- Place chocolate chips in a small bowl and microwave in 10-second increments, stirring every 10 seconds, until the chocolate is completely melted and smooth.
- Add melted chocolate chips to the batter and stir until mixed thoroughly.
- Both the cookie dough and the brownie batter should be pretty dry like a thick dough. Spoon one on each side of your cast iron skillet and smooth the top.
- Place in the oven and bake for approximately 20-25 minutes or until the top turns a golden brown on the cookie side (the brownie side will just be darker).
- Remove from oven and allow to cool for at least 5 minutes before slicing and plopping it in front of YOUR under-enthusiastic teen. Heh.
