Like everybody, I need a coffee break sometimes. But, with the holidays winding down and the long stretch to Spring Break seeming so far away, I needed a little more than just a cuppa to make my day. The weather’s just been so dreary! That’s why I decided to throw a little impromptu Coffee Break Party & whip-up a Recipe for Vegan Cupcake Coffee Ice Cream. And, somewhere along there, I got a little cupcake and drank it too. Heh.
My Coffee Break Party
Alright, I really had fun with this. There was just kind of a lull in the new year, we needed a little “perking-up” to get us laughing again, despite the weather being lousy and the fun of the holidays having passed.
So, I invited over the in-laws, my parents and a few other folks for a cup of coffee, talk about the new year and a few laughs to bring a little sunshine into our cold, chilly day. Oh, and a cuppa hot coffee to beat-back that cold, because, it’s CHILLY! LOL!
The best cup of coffee is always that first one. And my mom got the reward of being the first to get her cup ready (although she kind of stole my mug! LOL!).
And the donut mugs were a HUGE hit. Everyone had a bite (or the whole thing).
Even the smallest of our guests got in on the yum.

Setting the Stage for a Coffee Break
Brew coffee–but not just any coffee. This is a party after all! I mean, coffee just has that distinctive smell–and my new favorite obsession, the Dunkin’ Donuts’ new Vanilla Cupcake Flavored Coffee, is like having my cake and drinking it too while smelling a cupcake of AWESOME. It just smells SO FREAKING GOOD. It’s totally made with the bakery flavor dunked right in! And, I love this new flavor. It deserves to join the Dunkin’ Donuts’ Bakery Series line of bakery shop flavors. Top quality yummy coffee.
Decorations for an Easy Coffee Break Party
So, this was SOOOO easy! I simply put together a “table cloth” of pink and orange tissue paper with coffee filters sprinkled over them. Then, I found some awesome donut wrapping paper to help give my snacks a boost, then tossed-together a cool coffee-filter flower garland to top a background of tissue paper simply taped to some cardboard. I mean, it LOOKS really fancy, but I just had fun with pink and orange.

- Jelly Beans (because they were PINK)
- Sprinkles, Coffee and More Coffee
The iced coffee and hot coffee are both made from the awesome Vanilla Cupcake Flavored Coffee that you can find in pretty much any grocery store anywhere. By itself or in any of these recipes, the coffee is totally the perfect, guilt-free treat for any occasion (even breakfast–heh).
Vegan Cupcake Coffee Ice Cream
Coffee Break Party & a Recipe for Vegan Cupcake Coffee Ice Cream
Ingredients
- 4 cans coconut milk
- 1 cup powdered sugar
- 1/4 cup Vanilla Cupcake Coffee
- 1 cup chocolate chips
Instructions
- To make the ice cream, open your coconut milk cans and scoop the thick cream part into a bowl, trying to get as little of the coconut water as possible. Discard coconut water or just set aside for chugging later, whatever.
- Add the powdered sugar and vanilla to the coconut cream.
- Mix on high 2-3 minutes with a hand mixer until it becomes stiff and fluffy.
- Fold-in the chocolate chips and the coffee. Yup. Just like that.
- Now, place in the freezer for at least 2 hours to let it get hard.
- Then, prepare your tastebuds, friends, because they're about to explode.
