Do you ever have just one of THOSE days? Like, you’re going to do all these great things when you wake up and then, within an hour, you know there’s a problem with that plan. Then, at like 4, you’re sitting in a corner sobbing over a bowl of ice cream while your toddler marches around you like an Ewok eyeing it’s meal. Yeah, that happens. Not sure why. It can’t be the full moon–that happened last week. And she didn’t have any candy (so it can’t be that dye #5 that I hear makes kids nuts). Whatever. I just wanted a moment to myself. Some little slice of heaven that I could savor while my child ran screaming around me (oh, and the baby learned to crawl…yikes). So, I made some Chocolate Covered Cherry Dairy-Free Ice Cream. Yeah, you heard me. Bon-bons on the couch next, folks, that’s where I’m headed.
Honestly, though, this was such a yummy alternative to the kiddy-type ice creams I tend to make. Not that I don’t love those (because I do–very much), but having a little grown-up bite was kind of nice for a change.
Ingredients for Chocolate Covered Cherry Dairy-Free Ice Cream
- 1/2 cup cherries, I used canned cherries
- 1/8 cup cherry juice (handy from the canned cherries)
- 4 cans coconut milk
- 1 cup powdered sugar
- 2 tspn vanilla extract
- 1/2 cup dairy-free chocolate chips
How to Make Chocolate Covered Cherry Dairy-Free Ice Cream
- To make the ice cream, open your coconut milk cans and scoop the thick cream part into a bowl, trying to get as little of the coconut water as possible. Discard coconut water or just set aside for chugging later, whatever.
- Add the other ingredients except cherries and chocolate chips.
- Mix on high 2-3 minutes with a hand mixer until it becomes stiff and fluffy.
- Fold-in the chocolate chips and cherries until thoroughly mixed.
- Place in the freezer for approximately 2 hours.
- Feel free to pace.
- Enjoy that sweet, decadent goodness–then make another batch.
