Candy Corn Rice Krispies Treats {vegan}

It’s coming up on that time. You know, with the parties and the costumes and the “ticks” for “treats”. Oh, how everyone loves this time. The kids think it’s like a pre-Christmas celebration where they get candy instead of presents. I’m beginning to think they’re right. But with the coming parties (especially at school), I’m always leery of what “treats” might be given to my kiddos who are allergic to like EVERYTHING. And me, too. So, I always plan to bring a veggie tray (you’d be surprised how many kids like that at a party) and some form of the classic Rice Krispies Treat recipe. This year, for their Halloween Party, I’m bringing Candy Corn Rice Krispies Treats. Score one for mom.

I love this vegan rice krispies treat recipe for Halloween with Candy Corn!

Ingredients for Candy Corn Rice Krispie Treats

  • 3 tblspn coconut oil
  • 1 bag of mini-marsmallows (4 cups)
  • 6 cups Rice Krispies cereal (or similar)
  • 1/2 cup candy corn candies (is that how you say that?)
  • 1 cup powdered sugar
  • 2 tblspn coconut milk
  • yellow food coloring

How to Make Candy Corn Rice Krispies Treats

  1. In a large saucepan or dutch oven, melt coconut oil over medium heat.
  2. Add in marshmallows and continuously stir until marshmallows have melted.
  3. Remove from heat.
  4. Add Rice Krispies and continuously stir until all Rice Krispies are covered in marshmallow deliciousity.
  5. Allow to cool for 5 minutes until mixture  can be safely handled.
  6. While that’s cooling, spray a cake pan with cooking spray.
  7. After the mixture has cooled, line the bottom with a thin layer of the mixture, patting it down firmly.
  8. Place a layer of candy corn candies (man, I hope that’s right or I’m going to be really embarrassed) on top of the bottom layer.
  9. Then, place a thick layer of the treats mixture on top of the candy corn candies.
  10. Mash layer together fairly well.
  11. Allow to rest for 10 minutes. (if you’re like me, this is all being done about 30 minutes before you’re supposed to be at the party and so this is when you can race to the shower and get dressed).
  12. Slice the treats like you would a pie (this is why we used a pie pan).
  13. Combine powdered sugar and coconut milk in a small bowl.
  14. Split the powdered sugar/coconut milk mixture into three portions.
  15. To one portion of the sugar/milk mixture, add approximately 25 drops of yellow food coloring. Mix thoroughly.
  16. To a second portion of the sugar/milk mixture, add approximately 5 drops of yellow food coloring. Mix thoroughly.
  17. Drizzle the uncolored sugar/milk mixture on the bottom 1/3 of the treats (the narrow end).
  18. Drizzle the darker yellow (orange) sugar/milk mixture on the middle 1/3 of the treats.
  19. Drizzle the lighter yellow sugar/milk mixture on the top 1/3 of the treats (the wide end).
  20. Allow treats to sit for approximately 5 minutes (the time it takes you to drive to the school and race inside) before allowing the tiny monsters at the party to devour them.
