Alright, so I’ve been cheating (a little) on my favorite fruit…I mean, I can’t have strawberries ALL the time…now, I know this sounds so naughty, but really, every once in a while, a girl’s got to have some of her second-favorite fruit…(*please don’t hate me, strawberry, please don’t hate me*). I promise, it won’t be as crazy of a love-fest as it is with strawberries (*I promise, dear, sweet, yummy, strawberry, I will come back to you and you alone–well, maybe with some chocolate*). No, a girl’s got to have an Easy Watermelon Slushy every once in a while to just–you know, spice things up. Heh.
This watermelon slushy idea came to me when I was a teen. My love for strawberries was in a rough-patch and the hole was being filled by snow cones (with whom I regularly cheat on my strawberries often during summer, but PLEASE, don’t tell the strawberries, I’m in enough trouble already with the watermelon slushy).
Ok, all joking about the strawberries is done. I’m tired of that shtick, as I assume you are–but it was funny, at first. Heh.
I couldn’t get enough snow cones as a teen and it was totally annoying that they weren’t within walking distance (so I had to wait for MOM to get home to drive me there–if she even would…ugh!). So, I had to come up with something on my own to fill the gaping void.
It took me ages to perfect the formula for the watermelon slushy. Just kidding, it took me one shot and when you read the recipe, you’ll understand why. And kick yourself for not thinking of it sooner. I love it. It’s one of the best recipes–I keep coming back to it summer after summer. And, I honestly didn’t even think about putting it on the blog until my mom insisted. I thought it was just so super simple that nobody would be interested. Apparently not. Heh.
So, without further ado (what the heck is “ado” anyway?!), here’s the recipe. I really hope you enjoy it as much as I do. It truly is one of my very favorites…
Easy Watermelon Slushy
- ½ small watermelon, fresh
- 2 tspn sugar
- ¼ cup water, cold (you may also use watermelon juice, if you have some)
- 4 sprigs of mint, optional
- Slice the watermelon into 1-inch chunks and discard any pop seeds, if applicable.
- Place watermelon chunks in a gallon-sized ziplok baggie and place in the freezer.
- Allow to freeze for about 2 hours.
- Mix water and sugar together in a small cup until the sugar is completely dissolved.
- Remove from the freezer and open the bag.
- Pour the water/sugar mixture into the bag, then reseal.
- Smash the watermelon/water/sugar and break it up until it makes a nice, smooth mash.
- Pour into 4 cups.
- Place a sprig of mint (or two--this part is totally up to you) on top.
- Serve to your excited guests (or little kids...heh).
