I love this recipe for Southern Style Meatloaf in the Crock Pot. I mean, seriously. I didn't even know you could make meatloaf in the slow cooker.

Not that I have a hard life, but it’s pretty busy. One of the things that makes my life easier, and leaves me more time for fun stuff, is a Slow Cooker (paid link). I love being able to turn on that little bit of auto-magic when I leave for work to come home and find supper all done. All I have to do is pop some veggies in the microwave, and viola!–dinner is on the table in under 30 minutes. Doing that and smelling this delicious Southern Style Meatloaf {Slow Cooker Style} when I walk in the door…that makes my hectic day just so much more pleasant.

Working, taking care of small children, cooking, cleaning house, laundry . . . etc. LIFE just keeps getting in the way of the things I’d really like to be doing–fishing, watching a movie, relaxing in a warm tub (with a Fizzy Foot Bomb Pedi afterward). And, as you can see, COOKING is not on that list of things I even WANT to do. So, I take a lot of shortcuts. Like making this recipe for Meatloaf in big batches.

For example, this recipe calls for one pound of ground beef, but sometimes I put a multiplier on it–like 5 times. Then, I cook whatever size meatloaf I want for right now, and freeze the rest for later. I have a bowl that makes the perfect mold for my slow cooker. I just line the bowl with plastic wrap, fill with prepared (raw) meatloaf mixture and freeze. When I’m ready to cook the Meatloaf, I just dump it out of the bowl, remove the plastic wrap, and drop it in the slow cooker. If I make more meatloaf mixture than my slow cooker and that bowl will handle, I freeze one bowl of it at a time, then take the frozen mixture out of the bowl and put it in a plastic bag, then do it again. I highly recommend doing that if you’re busy.

Ingredients

  • 1 pound Lean Ground Beef, ground chuck or round
  • 1 Egg, beaten
  • 1 slice Toast, crumbled (or 6 Saltine Crackers, crumbled)
  • 1/4 cup finely chopped Onion
  • 1/4 cup finely chopped Bell Pepper
  • 1 teaspoon mined Garlic
  • 1 small can Tomato Sauce
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1 small can Tomato Paste, to put on top of the Meatloaf

Instructions

  1. Place Ground Beef in a large mixing bowl.
  2. Add the Toast or Crackers and the Egg, then mix well (use your hands).
  3. Add the Onion, Bell Pepper, Garlic, Tomato Sauce, Salt and Pepper
  4. Mix it all up really well (squish it between your fingers).
  5. Put the mixture into your Slow Cooker, Top with Tomato Paste, and cook on low for 6 to 9 hours.
  6. Six hours should do the trick, but it depends on your cooker, if you're starting with frozen mixture, and how much Meatloaf you're cooking at one time. I typically cook a couple pounds at one time, start the cooking with frozen mixture, and cook it on low for 8-9 hours.
