I love Thanksgiving. It’s totally one of the awesomest feelings to have your whole family with you, happy to be sitting down to a meal together, thankful for another great year together. And the turkey. I. Love. Turkey. Like a lot. My fave is smoked turkey legs…best thing ever. But you can totally have too much of a good thing if you just eat it one way and don’t have a legitimate reason to be eating it–again. I mean, I’ve gone so far as to have turkey with breakfast…just to get rid of the stuff. Not this year, though. This year, I’m going to be prepared with a few leftover turkey recipes. Starting with this one for Leftover Turkey Kabobs. They’re so good. So simple. Perfect for after Thanksgiving, or even before, if you’ve got some turkey laying-around.
Ingredients for Leftover Turkey Kabobs
- 1 bell pepper
- 1 lbs leftover turkey (cooked, duh)
- 1 small onion
- 1 juiced lemon
- salt & pepper to taste
How to Make Leftover Turkey Kabobs
- Preheat grill to high.
- Slice turkey, bell peppers and onion into 1-inch square slices.
- Thread turkey, bell pepper and onion onto a grill-safe kabob stick.
- Drizzle lemon juice over each kabob.
- Sprinkle desired amount of salt and pepper on each kabob.
- Turn grill to medium and immediately place kabobs on grill.
- Grill for 3-5 minutes, then rotate.
- Repeat until each side has been grilled.
- Immediately remove from heat and allow to cool for 10 minutes before serving.
- Enjoy that turkey, because it won’t last!
These turkey kabobs are so delicious, you will want to have leftover turkey all year long, not just at Thanksgiving or Christmas!
