Don’t tell me I’m the only person out there that would really like to sit down and just have a bowl of chocolate chip cookie dough sometimes. I mean, for reals, when I’m making cookies, I totally have a bite or two (or five), but I’m supposed to be dairy-free and gluten-free, so I totally pay for it later. And, I hate the idea of dying from salmonela poisoning (or some other bizarre eggy disease) just for a few bites of creamy goodness. So, Edible Chocolate Chip Cookie Dough with no egg, no dairy, and no wheat had to be in my creative recipe-generating mind somewhere. I thought and thought and experimented like crazy. This is the result. Enjoy, my friends. Enjoy.
Edible Chocolate Chip Cookie Dough
- 3/8 cup packed brown sugar
- 3/8 cup granulated white sugar
- 3 tblspn coconut milk (the kind you use for cereal, not the canned kind, unless that’s all you’ve got, but really at that point, don’t open a whole can to do this…just put some water in the milk’s place and see how it works out)
- 1 tsp vanilla
- 1/2 tsp salt
- 1/2 cup coconut oil (paid link), room temperature
- 1 cup oat flour (or, you can be cheap and lazy like me and just use baby oatmeal cereal)
- 1/2 cup dairy-free chocolate chips (paid link)
- (homemade or some of that store bought stuff, either way…but one day I’m going to make a recipe for some made with chocolate liqueur, so keep an eye-out for that)
Edible Chocolate Chip Cookie Dough
- Cream the coconut oil and sugars together.
- Add vanilla, milk and salt and mix thoroughly.
- Mix-in the oat flour in 1/4 cup increments until mixture is smooth.
- Stir-in the chocolate chips.
- Eat like there’s no tomorrow. Oh, how I love this stuff.
Now, if you’re super-creative like I am, you’ll figure out a recipe for making this into dairy-free cookie dough ice cream (or just use mine here). And then you’ll pop this in the oven and make dairy-free egg-free chocolate chip cookies. So, you might be creative like me. Or you can just use my recipes. Whatever. That’s why I put the recipes out there…
