Every year I pinky promise myself that my back to school season won’t be so hectic. I swear that my kids will only get one activity each, and I will spend my evenings relaxing at home and cooking lengthy creative meals. Reality? I run in the door after going to football, dance, soccer, play practice, and swim lessons and hear that dreaded question every single night, “Mom? What’s for dinner?” Too often I’ll grab fast food or heat up something totally flavorless because we’re all starving and need something RIGHT NOW. Thankfully, I wised-up and started making simple one-pot crockpot meals that cook all day and are ready the second that we walk through the door! One of our favorites is this Roasted Peaches & Pork made with Smithfield Marinated Roasted Garlic & Herb Pork Loin Filet!
Friends, let me tell you that this Roasted Peaches & Pork Loin is one of the easiest dinner recipes I’ve ever made. It takes 15 minutes to put it together and then you just leave it to cook while you’re off doing way more important things than slaving in front of a hot stove! It was also absolutely delicious. Even the toddler wanted second helpings! I was so excited to be able to walk in the door knowing that we had real flavor, real fast for dinner without a second thought. 

Pork Loin with Roasted Peaches
- Smithfield Marinated Roasted Garlic & Herb Pork Loin Filet
- 4 Peaches
- 9-10 Red Potatoes
- 3 tbsp Minced Garlic
- 1/2 cup Red Wine Vinegar
- Chop red potatoes into small chunks.
- Place red potatoes into your crockpot.
- Cover with 1/2 cup red wine vinegar.
- Add 3 tbsp minced garlic.
- Mix ingredients in the crockpot.
- Lay Smithfield Marinated Roasted Garlic & Herb Pork Loin Filet on top.
- Cut peaches in half.
- Cover the pork loin and potatoes with peaches.
- Cover and cook on low for 8 hours
