One of my favorite memories as a kid is sharing in the making of–and eating more than my fair-share of snow ice cream. Being as we’ve always lived in Texas, this was a huge treat for us. And, because I love you, I’m sharing this awesome Dairy Free Snow Ice Cream recipe!
Ingredients for Dairy Free Snow Ice Cream:
- Lots of snow–like 8 cups (pssst, if you live somewhere that never snows, you can use shaved ice like you make with one of these bad-boys: Hawaiian Shave Ice Machine)
- 3/4 can of coconut milk (not the kind you put on your cereal, but the canned kind that separates), mostly the cream part, less of the water part, if you can. (Refrigerate the canned coconut milk overnight, and the cream will come to the top of the can.) My mom used creamer instead, but I still have trouble with creamer, so I go for coconut milk. You do whatever works for you–it’s your dairy free snow ice cream at this point.
- 2 cups of powdered sugar (you can use granulated, but then the ice cream might be crunchy, blegh!)
- 1 tsp vanilla extract
Making Your Dairy Free Snow Ice Cream:
- Place the coconut milk, sugar and extract into your blender (I use a Ninja for this). Blend until completely combined and creamy.
- Pour this mixture into a clean bowl and start folding snow into the mixture. Keep folding snow in until you’ve got the entire 8 cups of snow in there.
- Don’t stir too much or you’ll mush the snow into not-so-much-snow. The color should be consistent and flavor should be just like ice cream.
- Enjoy!
