When I was a kid, my mom would make the BEST buttermilk pie. I tried to re-create it the other day in gluten-free and dairy-free and egg-free (just call it vegan…) style, but it flopped so bad it hurt. But, in preparation, I DID find a way to make super-easy Dairy-Free Buttermilk that I didn’t know about before. Apparently, it’s just like regular buttermilk–only without the dairy…heh.
My dad worked at a dairy-farm when he was a teen and he used to tell me all about his antics on the farm–the snakes in the cow feed, the milking of the cows before school, milking of the cows after school (after he got done with his shift at the peanut mill) and the snakes in the cow feed (eeeeew). So, yea, I’ve been told about buttermilk and how it’s not really milk and butter mixed together (which is what I thought it was as a kid). But, somehow, amongst all that story-telling, my dad only told me how to make cow’s milk buttermilk, not Dairy-Free Buttermilk.
So, I had to come up with a recipe all on my own. And, through some thoughtful contemplation (meaning a call to my mommy who is the queen of all things cooking in our family), I totally did it. Nasty, icky dairy-free buttermilk–just like the nasty, icky cow’s milk buttermilk that my mom would make buttermilk pancakes with on Sunday mornings sometimes. LOL!

I found a way to make super-easy Dairy-Free Buttermilk that I didn't know about before. Apparently, it's just like regular buttermilk--only without the dairy...heh.
Ingredients
- 1 cup coconut milk, cereal kind, not canned
- 1 tspn vinegar
Instructions
- Mix and let stand for 5 minutes at room temperature.
- Yup, that's it.
P.S. I kind of feel like a weirdo even publishing this as a recipe, but I’m really tired tonight and our power is off, so I’m just killing time until it comes back on, and I can cook something more awesome…LOL!
