I’m just a hungry person, I guess. I spend a lot of time just enjoying cooking and then devouring my food. And though I’m an introvert when it comes to like talking to people, I totally enjoy being adventurous when it comes to food. Particularly breakfast foods. I’m not sure where my obsession with breakfast comes from–my mom always fed us plenty in the mornings. I don’t know. I guess I’m just weird that way. So, today, I’d like you to enjoy my latest fun yummy breakfast idea: Vegan S’mores Pancakes. You can thank me later after you wipe the chocolate off your chin.
Ingredients for Vegan S’mores Pancakes
The Pancakes
- 2 tblspn honey
- 1 tspn vanilla extract
- 1/2 cup granulated white sugar
- 1/2 cup packed brown sugar
- 2 cups flour
- 1 tspn white vinegar
- 1 1/2 cup coconut milk (or water, whatever, this is open for interpretation)
- 1/2 cup marshmallows
- 1/4 cup chocolate chips
The Topping
- 1/4 cup canned coconut milk cream (just the cream off the top of the can, not the water under that)
- 1/8 cup powdered sugar
- 1/2 cup marshmallows
- 1/4 cup chocolate chips (you can get the dairy free ones at the store, or you can make your own, whatever)
How to Make Vegan S’mores Pancakes
- Mix flour, granulated sugar, brown sugar, and baking powder in a medium bowl.
- Mix wet ingredients in a separate medium bowl.
- Mix the wet ingredients into the dry ingredients in 1/3 cup increments. Stir thoroughly until no lumps remain.
- Heat griddle on medium until water dances on the surface when sprinkled. Turn heat down to medium-low before cooking pancakes.
- Using a paper towel and a small portion of coconut oil, make sure the griddle is oiled so the pancakes don’t stick (they will try to with the honey in the mixture).
- Spoon pancake mixture onto the griddle in 1/2 to 3/4 ladle-sized portions (no more than 4 to a griddle unless you’re looking for a mess or have one of those awesome huge griddles that can handle 6 easily).
- Place 5-6 marshmallows and 5-6 chocolate chips in center of pancake.
- Gently pat the marshmallows and chocolate chips into the pancakes.
- Spoon a little tiny bit of pancake on top of the marshmallows and chocolate chips, just to make sure they don’t make
- When edges become dry-ish, flip pancakes gently. When underside is equally golden brown, remove from heat.
- Be sure to wipe the griddle and place more oil on it, to keep the next batch of pancakes from sticking.
- Then, ladle some more pancakes on the griddle! Keep going until the entire pancake mixture is cooked and done.
- To make the topping, mix all the ingredients together except for the marshmallows. Blend well.
- Place a dollop of the topping on top of the hot pancakes and sprinkle liberally with marshmallows.
- Enjoy your vegan s’mores pancakes with a giant smile!!
