When I’m making a yummy breakfast for the family, I like to be creative. And some mornings, I need a minute to compose myself, I get so excited about this creative Strawberry Cream Cheese Banana Nut Bread recipe. It’s also kind of awesome that this recipe has fresh strawberries, which means that I need to eat it all right away–no leftovers for me! LOL!
Ingredients for Strawberry Cream Cheese Banana Nut Bread
- 2 cups Fresh Strawberries, sliced (I like mine sliced VERY thin for this recipe)
- 1 cup Powdered Sugar
- 2 1/2 cups Flour
- 1 2/3 cups Granulated Sugar
- 1 tsp Baking Soda
- 1 tsp Salt
- 2 8-oz packages of Cream Cheese, room temperature
- 1 1/4 cups Bananas, mashed
- 2/3 cup Buttermilk
- 2 unbeaten Eggs
- 1 tsp Vanilla
- 2/3 cup Walnuts (chopped)
Putting Together Your Strawberry Cream Cheese Banana Nut Bread
- Preheat oven to 350 degrees and spray non-stick spray into 2 bread-loaf pans.
- Cream one package of cream cheese and set aside.
- Sift together dry ingredients except for the powdered sugar.
- Add creamed cream cheese, bananas, 1/3 cup buttermilk and beat for 2 minutes on medium setting using a hand mixer.
- Add remaining buttermilk, eggs and vanilla; beat for 2 more minutes.
- Fold-in the nuts.
- Pour 1/2 mixture into each of two pans and bake for 20-25 minutes or until toothpick comes out clean.
- While the bread is baking, cream the remaining cream cheese package with the powdered sugar.
- After bread is baked and cooled, remove the bread from one of the pans of baked bread and place it on the cake plate.
- Spread a layer of the cream cheese mixture, then place a layer of strawberries on top of the cream cheese mixture. If the cream cheese mixture is too thick to spread easily, mix-in up to 2 tablespoons of milk.
- Place the remaining bread loaf on top of the strawberries and spread a layer of cream cheese, then place a layer of strawberries on top of the cream cheese mixture.
- Enjoy!
The best part of this recipe is that the cream cheese mixes with the strawberries in pretty much every bite. If you can get the nuts spaced just right, you get the awesome mixture of cream cheese, strawberries AND nuts in each bite, which makes my tongue sing. So, yes, I love this recipe. Eat it.
