This is a quick and easy recipe, regardless of how many folks you’re going to feed. Last weekend, I prepared this for the hubby, daughter, son-in-law, grandson, and myself. It only took about 30 minutes from start to finish to make this easy Chicken and Mushrooms.
Mashed potatoes paired well with this dish, and we also had some fresh asparagus sautéed in olive oil. And I have to tell you, there wasn’t much conversation after we all sat down to eat . . . everybody was too busy eating!
Chicken with Mushrooms Ingredients
- 2-4 pieces of fresh Chicken (use boneless chicken breasts or thighs)
- Onion, small, coarsely chopped
- Mushrooms, sliced (fresh or canned)
Assembling Your Chicken with Mushrooms
Put 1/4 cup cooking oil (canola or olive are my favorites) in a frying pan over low-medium heat. Add chicken (seasoned to taste) and brown on both sides. Remove chicken and set aside. Add chopped onion and sliced mushrooms (drain mushrooms if you’re using canned ones) to frying pan, and sauté until tender. Spoon onions and mushrooms over chicken pieces and serve. This is a very tasty and healthy dish, and hardly takes any time to prepare. I sometimes like to garnish with shredded Monterey jack cheese.
