This Dairy Free Chicken Enchilada Soup literally comes together in just minutes. You can even cheat it with pantry ingredients and a rotisserie chicken from the store. This is made in a slow cooker. Can be ready in an hour or less and can keep for hours or overnight on low for lunch the next day. You know like those times where you need that meal that everyone in the house is going to eat at different times. This is the perfect soup for those days.
See we have these days where everyone seems to be going different ways. Soups like this that can be kept at a low heat all day make it so easy to keep everyone feed with less work.
This soup is also completely dairy free for those that don’t rock the milk. It’s base is broth and enchiladas sauce. Great for those that are lactose intolerant. I like to top it with cilantro or maybe some avocado to bring brightness and freshness to the bowl. Dairy Free Chicken Enchilada Soup is also great for a crowd. I love to make this for superbowl parties, friend gatherings, and even an office or holiday pot luck.
What is so awesome about this soup ya’ll is that I can put all the ingredients into with the rotisserie chicken. Then pop it into the fridge to keep over night. When you have a office party or pot luck just carry along to the party then plug in and let it heat up. I like to get there a little early so it has enough time to warm up. It’s especially great when the the party is at like lunch time and you have to be there in the morning because it’s keeps and keeps!
