Use two large rubber band to twist over your slow cooker lid onto the handles in order to keep the lid in place if you do not have a locking lid.
Dairy Free Chicken Enchilada Soup
- 2 cups rotisserie chicken
- 1 can corn
- 1 can black beans
- 1 can fire roasted tomatoes with garlic
- 1 can rotel
- 1 large can red enchilada sauce
- 4 to 6 cups chicken broth
- 1/2 tablespoon cumin
- 1/2 tablespoon paprika
- 2 teaspoon chili powder
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/2 avocado; sliced
- 2 sprigs cilantro; chopped
- In a slow cooker, add in cooked chicken and enchilada sauce. Turn on low heat.
- Add the corn, black beans, tomatoes, and green chiles. Give it a good stir. Add chicken broth.
- Add in all seasonings. Stir. Cook on low for an hour.
- Add cilantro and avocado.
