Mini-Pizza Cups {making lunch fun for kids series}

My kids are always asking to take pizza to school for lunch, but we don’t even order-out that often, so the request is kinda silly. I mean, I don’t even have pizza to send in their lunch boxes…except that I can make Mini-Pizza Cups. Super-fast, simple and quick, I can make this while I’m making dinner or cleaning-up afterward, whatever. I especially like making this for the day after I made spaghetti, so I can use the leftovers. And, I can totally get creative with simple ingredients, which, for whatever crazy reason, makes my kids gobble down more than they would if I’d stuffed each ingredient into separate baggies. Silly kiddos.

These mini-Pizza Cups are the easiest lunch idea for kids

Ingredients for Mini-Pizza Cups

  • 5 “scoop” tortilla chips
  • 2 1/2 tblspn grated mozzarella cheese
  • 5 tspn tomato paste (or leftover spaghetti sauce, which is my preference)
  • 5 slices pepperoni
  • 5 tspn sliced black olive (if your kids like them–my kiddos love love love them, but you could do green olives or onion or no veggie at all)

How to Make Mini-Pizza Cups

  1. Preheat oven to 350-degrees.
  2. Lay-out your tortilla chips with the open end up.
  3. Place 1 tspn tomato paste in the bottom of each chip.
  4. Place 1 tblspn of cheese on top of the tomato paste.
  5. Fold pepperoni slices in half, then in half again.
  6. Place 1 pepperoni slice on top of the cheese.
  7. Place 1 tspn olives on top of the pepperoni.
  8. Place pizza cups in the oven for approximately 10 minutes.
  9. Remove from heat and allow to cool before handling.
  10. Enjoy!

These are also really fun for the kiddos to help make. My 13 year old likes to put his own together (and stuff waaaay too much cheese in each cup, but whatever) and maybe snack on them a little while he does. My husband sometimes likes to make these if he comes home late on spaghetti night…but he is just a giant kid sometimes.
