It used to be that I could wolf-down a whole thing of nachos and a beer, then just head home happy. Ok, well, that lasted all of about 10 minutes when I was in college. Before I could even graduate with my first degree, I was eating a cheeseburger, running screaming to the bathroom and being so ill that I’d have to go home before the beer was even served. Frankly, it got to be kind of embarrassing. The absolute worst was at my poor Mother-in-Law’s house (or is it Mother’s-in-Law house? no, that doesn’t sound right either…) and we’d gone out to have some thai. The food was awesome, and afterward, we went Christmas-light trolling. Very pleasant, except that about 2 minutes into the car ride, my stomach wanted to come unglued. When we got home, the toilet clogged and then overflowed. I will never, ever, ever feel like I am a normal human being because of that incident–I’m just a filthy animal. Ewww. So, no dairy for me. Ever. No more upset tummies for me. Ever. Love me some fake-stuff though.
Ingredients for Dairy-Free Ricotta Cheese
- 1 cup coconut milk
- 1 tspn white vinegar
- 1 tspn agar agar (paid link)
- 1 tspn lemon juice
- 1 tspn minced onion (fresh or dry, not matter)
- 1/4 tspn garlic
- 1/4 tspn salt
How to Make Dairy-Free Ricotta Cheese
- Place everything except the agar agar into a small mixing bowl.
- Stir everything together well.
- Slowly add agar agar to the mixture while stirring.
- Blend well.
- Place in the refrigerator overnight.
- Now, here’s the deal, this gets better the longer it “ages”. So, my recommendation is that you allow it to age in the fridge for at least 2 days, if not 4.
