Chocolate Covered Cherry Dairy-Free Ice Cream

I made some Chocolate Covered Cherry Dairy-Free Ice Cream. Yeah, you heard me. Bon-bons on the couch next, folks, that's where I'm headed.

  • 1/2 cup cherries I used canned cherries
  • 1/8 cup cherry juice handy from the canned cherries
  • 4 cans coconut milk
  • 1 cup powdered sugar
  • 2 tspn vanilla extract
  • 1/2 cup dairy-free chocolate chips


  1. To make the ice cream, open your coconut milk cans and scoop the thick cream part into a bowl, trying to get as little of the coconut water as possible. Discard coconut water or just set aside for chugging later, whatever.
  2. Add the other ingredients except cherries and chocolate chips.
  3. Mix on high 2-3 minutes with a hand mixer until it becomes stiff and fluffy.
  4. Fold-in the chocolate chips and cherries until thoroughly mixed.
  5. Place in the freezer for approximately 2 hours.
  6. Feel free to pace.
  7. Enjoy that sweet, decadent goodness–then make another batch.
