S'mores Pumpkin Pie

  • 2 T coconut oil
  • 1 1/2 C canned pumpkin
  • 1 C vegan chocolate chips or chunks we used chunks because, well, they were yummy
  • 2 sleeves classic Honey Maid graham crackers
  • 2 cups mini-marshmallows


  1. Preheat oven to 350 degrees.
  2. Using a food processor, crush one and a half sleeves of the graham crackers.
  3. Mix the coconut oil and crushed graham cracker.
  4. In a pie pan, mash the graham cracker to the bottom and edges, forming a pie crust of sorts.
  5. Place a layer of chocolate chips or chunks on top of the pie crust, covering the whole bottom.
  6. Cover the chocolate with the pumpkin. Be sure to spread it as evenly as possible.
  7. Cover with the marshmallows.
  8. Place in the oven for 10 minutes. Marshmallows should be lightly browned.
  9. Remove and allow to cool for about 5 minutes.
  10. Garnish with additional crushed graham crackers and/or pumpkin as desired.
