Leftover Turkey Chili

If you've got Leftover Turkey, (that was a joke--we both know you DO have leftover turkey), you're gonna love this recipe for Leftover Turkey Chili.

  • 4 cups Leftover Turkey cubed (shredded or chopped will work, too)
  • 6 cups water
  • 2 T beef base
  • 8 strips bacon cooked, drained, and torn or cut into bite-sized pieces
  • 1 can beans chili, kidney, or pinto
  • 1 small chopped onion white, yellow, or purple
  • 4 T chili powder
  • 1/2 cup flour
  • 1 cup cheddar cheese shredded


  1. Fry bacon until fully cooked, but still pliable.
  2. Remove from skillet and place on paper towel to drain. Set aside.
  3. Sauté chopped onion in bacon fat, remove to paper towel to drain. Set aside.
  4. Remove turkey from bones, cube, and place in dutch oven over medium heat.
  5. Add 5 cups water and stir occasionally.
  6. When water comes to a boil, add beef base and stir.
  7. Add beans and sautéed onions.
  8. Reduce heat to low.
  9. Combine flour and chili powder. Add enough water to make a thick paste. Stir until smooth. Continue to add small amounts of water and stir until water is incorporated. When enough water has been added to make the mixture pourable, slowly pour into turkey and water mixture while stirring.
  10. Continue to simmer and stir until the mixture thickens just a little.
  11. Salt and pepper to taste.
  12. Serve over crackers, corn chips, or cornbread (my personal favorite). Garnish with bacon pieces and cheddar.
