I put a pan of cornbread in the oven, and by the time the cornbread is done, this Quick Beef Stew is also ready to eat--my mouth is watering just thinking about it!

  • Ground beef one pound
  • Mixed vegetables 15 ounce can
  • 2 cans V-8 Vegetable Juice 11.5 ounce


  1. In a dutch oven, brown the ground beef, drain, and return to dutch oven.
  2. Add the mixed vegetables and V-8 juice.
  3. Bring to a boil, reduce heat, and simmer until vegetables are hot.
  4. Serve with crackers or cornbread. This is a really quick way to make a flavorful and healthy dinner!
