  • 2 bell peppers
  • 1 cup quinoa
  • 2 cups water
  • 10 sunburst tomatoes
  • 1/2 cup spinach canned or fresh
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 can tomato paste
  • 1/2 cup water


  1. Cut off tops of peppers and remove seeds. Rinse.
  2. In a small sauce pan, add quinoa and 2 cups water. Bring to a boil then reduce to a simmer. Coo for 15 minutes or until quinoa is cooked.
  3. In a bowl, add quinoa, sliced sunburst tomatoes, and spinach. Toss. Add in salt and pepper and stir. Fill mixture into the peppers.
  4. In a bowl, mix tomato paste and 1/2 cup water. Whisk.
  5. Place peppers into a baking dish and top with tomato sauce. Bake at 350 degrees F for 35 minutes.
