I decided I was tired of being cold and, frankly, wandering around the house with a blanket around you is, well, silly. So I made some Vegan Hot Chocolate (AKA Vegan Unicorn Hot Cocoa) to warm me up!

Look, I know that not everyone is all about the unicorn thing.

But, really, even the hardest hearts have to agree that this Vegan Hot Chocolate (what I’m tempted to call Vegan Unicorn Hot Cocoa for-ever because YEAH!) is super cute and totally worth trying.

Seriously, I think I might have gone overboard on this Vegan Hot Chocolate, though.

I mean, who needs sprinkles with Vegan Unicorn Hot Cocoa? Oh, that’s right! Me!

And my kids–they needed some, too. Obviously.

Despite my need to go overboard, you really do have to try at least the basic recipe.

And, if you’re serious about making this Vegan Hot Chocolate (aka Vegan Unicorn Hot Cocoa), then you have to start with the secret ingredient: vegan white melting chocolate (paid link).

You can’t really have pink hot cocoa with cocoa powder or brown chocolate chips. Eh, the pink just wouldn’t come out.

So, don’t go that route.

And, bonus, you can make little shreds of the melting chocolate to put on top of your coconut milk whipped cream along with the marshmallows…mmmm…so much goodness going on here.

Dairy-Free Hot Chocolate - Vegan Unicorn Hot Cocoa

I decided I was tired of being cold and, frankly, wandering around the house with a blanket around you is, well, silly. So I made some Vegan Hot Chocolate (AKA Vegan Unicorn Hot Cocoa) to warm me up!

Ingredients

  • 3 cups coconut milk (in the box like you would use on cereal)
  • 1 cup vegan white melting chocolate
  • 10-15 drops pink gel food coloring, pink, bro
  • 1/4 cup corn syrup
  • 1/4 cup pink sprinkles
  • 1 cup coconut milk whipped cream
  • 1 cup marshmallows
  • 4 tbspn scrapings or chopped vegan white melting chocolate

Instructions

Unicorn Hot Cocoa

  1. Place the vegan melting white chocolate and coconut milk into a microwave safe bowl.
  2. Microwave the chocolate mixture in 30-second increments, stirring between, until the chocolate is melted and smooth.
  3. Add the food coloring and mix completely.
  4. Do not pour into mugs until ready to serve.

Toppings for Vegan Hot Chocolate

  1. Place the corn syrup into a flat plate.
  2. Place the pink sprinkles into a flat plate.
  3. Dip the lip of 4 mugs into the corn syrup and then the pink sprinkles, rolling and swirling to get them to stick well.
  4. Pour the unicorn hot cocoa into the mugs carefully avoiding the sides so you don't knock off the sprinkles.
  5. Pipe a generous portion of the whipped cream on each cup of Unicorn Hot Cocoa.
  6. Add shreds of chocolate and marshmallows.
  7. Enjoy!
