My life has changed a lot since I became a mom. And I thought I’d gotten rid of one thing I just hated…but this last week…ugh. Migraine. M-I-G-R-A-I-N-E. So, I made cookies. They rocked (although my migraine–which I still have–does not). They won’t cure a migraine, they won’t fix anything but your sugar craving. But they’re Gluten-Free and Vegan. And they are all MINE. So, enjoy some Vegan & Gluten-Free Mint Chocolate Chip Cookies–whether or not you have a migraine.

This latest migraine is nuts. Most migraines usually last between 4 and 72 hours. But this one just keeps hanging around…disappearing, coming back. It’s no fun. And although every migraine is more than just a headache and can come with all sorts of icky, like nausea, vomiting, sensitivity to light or sound (which is different for every person every time), this one was just…light sensitivity on an extreme (I couldn’t even drive), pain and just general funk-ness. I even had sensitivity to smells…stupid migraine. I finally just had to go to the doctor for help. In the meantime, though, I made cookies. My own personal therapy for anything that ails me. LOL!

You may be wondering: Cookies? Well, that’s super-simple. I’m a mom to a toddler and an infant (not to mention the teenager). I can’t let, well, anything take me down. And migraines rank in the top 3 of the world’s most prevalent medical conditions, so it’s not like it’s uncommon–I’ll just have to live my life despite it. And the kids like cookies. I like cookies. It’s like a generic “put a smile on your face” activity and treat. So, even if my eyes can’t open for the bright lights, I CAN enjoy a little yum. Heh.

Mint Chocolate Chip Cookies – AKA Migraine Cookies

Vegan & Gluten-Free Mint Chocolate Chip Cookies - AKA Migraine Cookies

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Gluten-Free and Vegan. And they are all MINE. So, enjoy some Vegan & Gluten-Free Mint Chocolate Chip Cookies--whether or not you have a migraine.

Ingredients

  • 2¼ cup gluten-free, dairy-free flour (like Bob's Redmill all-purpose)
  • 1 cup granulated sugar
  • 2 tspn mint flavoring
  • 1 tspn baking soda
  • ½ tspn salt
  • ¾ cup melted coconut oil
  • ½ cup plain apple sauce
  • 5 drops green food coloring
  • 1 cup dairy-free chocolate chips

Instructions

  1. Preheat oven to 375 degrees.
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, combine all wet ingredients.
  4. In a second mixing bowl, combine dry ingredients except chocolate chips.
  5. Add dry ingredients to wet in ⅓ increments.
  6. Mix well.
  7. Fold chocolate chips into the mixture.
  8. Roll ½-inch diameter balls and place 2-inches apart on the cookie sheet. Mash them down for flatter cookies, leave them balled-up for thicker-center, chewier cookies.
  9. Bake for 12-15 minutes, removing them JUST BEFORE they start to brown on the edges.
  10. Allow to cool for at least 5 minutes before feeding them to your migraine. Heh.
