I may or may not have just eaten my weight in this awesome vegan heath bar. I mean, toffee, chocolate; all dairy-free, gluten free and mmmmm....can you blame me

One of the biggest things that I miss since becoming *mostly* dairy-free is the candy. Not just any candy, though, I’m kind of in love with just a select few. Other people can have their Snickers or Butterfinger. They’re good, I just won’t like get in a girl-fight over them. Nope, no pulling hair over a Baby Ruth. But a Heath Bar? B*tch, you better step off. That’s my candy. Only, it’s not anymore. Uh, until this happened. I made a Vegan Copy Cat Heath Bar. Holy moley with a mole hill over the top. This is my new favorite EVERYTHING. Is it acceptable to eat this for breakfast? Yup. Lunch? Of course. Dinner? Well, everyone else can have that stew you made, but I’m having this…

So, dairy-free; check! Eggless; check! Gluten-free; check! Yeah, this is maybe the perfect dessert for people like me that just, you know, love a good Heath Bar but don’t want the dairy. Or, it could be ALL MINE!

Ingredients for the Vegan Copy Cat Heath Bar

  • 1 cup granulated sugar
  • 1 cup Earth’s Balance non-butter buttery spread business (mmmm….)
  • 2 tspns vanilla extract
  • 1/2 tspn salt
  • 1 cup dairy-free chocolate chips (affiliate link)

How to Make the Vegan Copy Cat Heath Bar

  1. Cover a baking sheet with a sheet of wax or parchment paper. Set aside.
  2. Place all ingredients (except chocolate) into a small pot over medium heat.
  3. Stir. When it’s all melty, keep stirring.
  4. When it turns a soft brown, keep stirring. Stir for about 20 minutes.
  5. Then pour it on the pan with the parchment paper.
  6. Allow it to cool for at least 2 hours.
  7. Break it into a thousand pieces. Set aside.
  8. Cover a baking sheet with a sheet of wax or parchment paper. Set aside.
  9. Pop your chocolate into the microwave in a glass, microwave-safe bowl for 30 seconds.
  10. Stir (I KNOW!).
  11. Pop that chocolate back in the microwave in 30-second increments until it’s smooth, stirring every 30-seconds.
  12. Pour into the baking sheet and spread into a thin layer (-ish, thin is a relative term) using a spoon.
  13. Immediately sprinkle the thousand pieces of toffee onto the chocolate and pat it in so it won’t fall off during the last 2 steps.
  14. Allow it to cool for approximately 10 minutes (or more).
