I feel like Valentines is a kind of special time that moms can shower a little love on kids in a kind of cutesy way. Like how you can get away with making them go on an obscure, unnecessary scavenger hunt for tiny, oblong objects on Easter…Valentines is just a day for doing some gushy-over-the-top-lovey-dovey-gooeyness. And gooeyness is the name of the game here. These Valentine Vegan Jelly Donuts are like a gushy-over-the-topness with gooey inside. Wait, that kind of sounds gross. But, you know what I mean, right? RIGHT?!

You can ask my son how weird I am about Valentines day. I’m ridiculous about it. There’s always a teddy bear (or two), some fun activity for the kids, and lots of treats. I blame all this on my mom. You see, my brother’s birthday is the day after Valentines, so while we certainly did things on Valentines, it was a little less so than other holidays, because, you know, not wanting to dim the awesomeness for my brother and all…of course, that just made me obsess a little over it. Who doesn’t want a stupid-sweet bear gripping a heart that says “I love you” or some other gushy love-statement? Or silly hand pies in the shape of hearts. I sure did. And, since I didn’t feel a huge overwhelming celebration was made of the day…well, I make up for it by overcompensating with my kids. That’s how it’s supposed to be done, right? I’m such a nerd.

Ignore me. Just go to the kitchen and start working on the most amazingly yummy jelly donuts you will ever enjoy…trust me. So good. So ridiculously good.

Valentine Vegan Jelly Donuts

These Valentine Vegan Jelly Donuts are like a gushy-over-the-topness with gooey inside. Wait, that kind of sounds gross. But, you know what I mean, right? RIGHT?!

Ingredients

  • Donuts
  • 2 tspn yeast, or a packet
  • 1/2 cup water, hot
  • 1/4 cup sugar
  • 1/4 cup coconut cream, warm (pop it in the microwave for like 20 seconds, that should do it--you just don't want it cold from the fridge)
  • 1/2 tspn salt
  • 1/4 cup coconut oil
  • 1 cup aquafaba, yup, that's bean juice
  • 1/2 cup apple sauce
  • 1/2 tspn vanilla extract
  • 2 1/2 cups flour
  • 3-4 cups vegetable oil for frying
  • Filling
  • 2 cups strawberry or raspberry jelly, I ran out and switched about 3/4 of the way through, heh
  • 2 tblspn powdered sugar for sprinkling over them.

Instructions

  1. Mix water, yeast and sugar together in a bowl and allow to stand for 10 minutes.
  2. Add remaining wet ingredients and mix thoroughly.
  3. Add flour in 1/3 increments.
  4. Mix until combined, but for no more than 5 minutes. Dough should be tacky, but a finger should come away clean--if not, add 2 tblspn flour at a time.
  5. Allow dough to rest for 15 minutes.
  6. Turn dough out onto a lightly oiled surface (do not use flour).
  7. Knead 10 times, then cover with a damp cloth and allow to rise until double in size or 45 minutes, whichever comes first.
  8. Punch down dough until flat.
  9. Cut out donut shapes using a heart cookie cutter.
  10. Cover with a damp cloth and allow to rise again, until double in size or for 45 minutes, whichever comes first.
  11. Heat vegetable oil in frying pan at least 3 inches thick. About 360-degrees is adequate. Too much hotter than that will be too hot...so watch it and be careful--it's hot.
  12. Fry each donut until slightly golden on each side (approximately 2 minutes-ish).
  13. Place on a wire rack to cool to the touch.
  14. Using a chopstick or cake pop stick, poke a hole in the center of each heart, wiggling it around inside (but being careful because you can easily go too far), to make room for the jelly.
  15. Place about 2 tspns of jelly in each donut, using a food injector if you're fancy like that--or just your kid's tylenol syringe, if you're ghetto like me.
  16. Sprinkle with some powdered sugar.
  17. Serve warm, if possible and Eat Your Heart Out!
