There’s two holidays I love more in this world more than anything else–Halloween (duh) and Valentines.

Now, I know that this may seem contradictory, but seriously, these two holidays are the least stressful, most fun and have the coolest “gear”.

For example, Valentines is all about sharing the love with imagery of hearts and fantastic little treats.

That’s my love-language right there, I’m certain.

And that’s why I’m so excited about these Valentine Cake Mix Cookies.

They’re hearts (check!) and they’re fantastically easy-to-make treats (check!). My little way of saying “I love you” at any Valentines Party (erhm, for the kids, right).

Valentine Cake Mix Cookies

You can't have a kid's Valentines party without some hearts or treats...it's a law. Thankfully these Valentine Cake Mix Cookies fit the bill.

Ingredients

  • 1 box of strawberry cake mix, any brand (I used Pillsbury)
  • 1/3 C. vegetable oil
  • 2 eggs
  • 2 tbsp flour
  • 10 oz Wilton chocolate candy melts
  • Small silicone heart mold
  • Large silicone heart mold
  • Small sandwich baggy
  • 1/4 C. Valentine sprinkles
  • 12 Wilton candy hearts

Instructions

  1. Pour the Wilton chocolate candy melts into a microwave safe dish and heat in 30 second increments, stirring occasionally until melted. Let cool a few minutes and scoop the melted chocolate into the small sandwich baggy.
  2. Snip one corner of the sandwich baggy and gently squeeze the melted chocolate into the small silicone heart mold. Gently tap so the chocolate lays flat and place in the fridge 20-25 minutes to set.
  3. Preheat the oven to 350 degrees and line a baking sheet with parchment paper or use a silicone baking mat.
  4. Combine the strawberry cake mix, vegetable oil, eggs and flour.
  5. Add in the Valentine sprinkles.
  6. Use a small 2" cookie scoop to scoop the cookie dough and use your fingers to gently press into the silicone mold. The cookie will fill out but press enough so it's roughly the heart shape.
  7. Bake 8-10 minutes.
  8. Remove from the oven, let cool a few minutes and gently press one candy chocolate heart on top of the top of each cookie.

*Makes approximately 18 cookies
