Unicorn Pancakes

I love a cute and silly recipe. But one that tastes as cute and amazing as it looks? That, my friends, that is worth the ultimate name: Unicorn Pancakes. Dude, if you don't make these at least once in your life, you're crazy.

Ingredients

  • 1 cup flour
  • 1 tbsp baking powder
  • Pinch of salt
  • 2 tbsp granulated sugar
  • 1 large egg
  • 1 cup whole milk
  • 2 tbsp oil
  • 2 drops red gel food coloring
  • 2 drops violet gel food coloring
  • 1 stick butter, softened
  • Whipped cream
  • 1/2 cup of condensed milk
  • Sprinkles

Instructions

  1. Start by sifting your flour, baking powder and salt. Add sugar and whisk.
  2. Add egg, milk, and oil and whisk until batter forms and is smooth.
  3. Divide the batter in 2 bowls and color each one with its respective gel food colorings. Mix until each bowl of batter is completely tinted.
  4. On a hot skillet (heated over medium heat) sprayed with cooking oil and/or coated with butter, pour ¼ cup of the batter and cook until bubbles form on top. Flip and cook until edges lift/turn a very light brown.
  5. Stack pancakes on a plate and pour over your condensed milk. Top with whipped cream and sprinkles and enjoy the sweet magic!

Notes

Yields: Approx. 8-10 small pancakes
