I love this recipe for Texas Style Chili con Carne. Which is just chili with meat, by the way! LOL!

Nine times out of ten, when I get home from work, my husband is going to ask me: “What’s for dinner?” And when we invite someone over, I always (ALWAYS) hesitate to make anything…I mean, what if they don’t like it? But whether they like home cooking or not, this is the recipe that all my guests love. Every. Time. Best part is, you don’t have to spend all day cooking, and Texas Chili con Cane is comes out flavorful and tender. So, it’s perfect for those evenings where I’m making dinner for the family–or for guests headed over.

I feel a little like Forest Gump as I sit here typing this…I’m going through a list in my mind of how many ways we could eat this chili tonight (because I’m staring it the pictures, knowing there’s a big bowl of leftovers in the fridge…mmmm….). My family loves to sit down with a bowl of Texas Chili over a few corn chips and topped with some grated cheddar cheese. Or with corn chips, cheese, and onion…or over a hot dog…or mixed with queso for a chili-cheese nacho…with hot water cornbread…so many options…

And, this recipe is great for freezing and eating later. We do that in the winter quite often. So, pretty versatile. LOVE IT!

Texas Chili con Carne (chili with meat)

Texas Chili con Carne (chili with meat)

Total Time: 30 minutes

You don't have to spend all day cooking, and Texas Chili con Cane is comes out flavorful and tender. So, it's perfect for those evenings where I'm making dinner for the family!

Ingredients

  • 2 pounds Ground Chuck
  • 1 teaspoon finely chopped Garlic
  • 1/4 cup finely chopped Onion
  • 1/4 cup Flour
  • 1 - 15 oz. can of Stewed Tomatoes
  • 1/2 teaspoon Salt
  • 2 tablespoons Chili Powder
  • 1/8 teaspoon Cayenne Pepper, or more, if you want your Chili spicy
  • 1/2 teaspoon ground Cumin
  • 1/2 teaspoon ground Celery Seed, I grind Celery Seed in my coffee grinder
  • 1 can kidney beans, if desired

Instructions

  1. In a large skillet (or a dutch oven) over medium heat, brown the ground beef, chopped onion and garlic, then drain on a paper towel. Place meat back in the skillet.
  2. While the meat is browning, place the tomatoes in a blender or food processor and chop into small, bite-sized pieces.Set aside.
  3. Bring meat back to cooking temperature, then sprinkle with the 1/4 cup of Flour. Stir.
  4. Add chopped, stewed Tomatoes to the beef and flour mixture. Stir and, using the tomato can, add a can of water. Stir.
  5. Add the Salt, Chili Powder, Cayenne Pepper, Cumin, and Celery Seed. (If you don't have a coffee grinder, you can use the Celery Seed whole.)
  6. Taste and add more Cayenne if you want your Chili to be more spicy--or, just bring the Cayenne to the table, and let each person spice up their own bowl!
  7. Add beans, f that's your bag.
  8. Continue to cook and stir for about 5 minutes, or until the mixture begins to slightly thicken.
  9. Serve with hot dogs, crackers, corn chips, or hot water cornbread.
