My son is really getting into the hype surrounding Star Wars Rogue One. He was just telling me today about some actor that spilled the beans about his role. Like I really care who is playing what and how the story will come together until the story is actually there to be seen…But anyway, he’s been so jazzed, I made him a special treat to kind of play into it. Star Wars Rogue One Vegan Toffee Ice Cream. Of course, it’s vegan and gluten-free, because that’s how I save the universe. LOL!

It’s not that I’m not excited about Rogue One. Or any other Star Wars movie. Don’t get me wrong. I am all about Star Wars and Pew-Pew fun. But the boy is taking this to a whole new level. It’s like EVERY DAY he’s got a new factoid or tidbit. And don’t get me started on the discussion surrounding the fact that the lead is a female (which he doesn’t care, by the way, but, apparently some of the guys at school think it sucks)…whatever. So, to shut him up about the stuff I don’t care about so I can get back to my personal viewing of The Force Awakens (yes, I’m watching it on my phone right now), I made this Star Wars Rogue One Vegan Toffee Ice Cream. Don’t blame me. Blame the kid. I had to stop the madness somehow. Heh.

Star Wars Rogue One Vegan Toffee Ice Cream

Star Wars Rogue One Vegan Toffee Ice Cream

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Star Wars Rogue One Ice Cream with Toffee. Of course, it's vegan and gluten-free, because that's how I save the universe. LOL!

Ingredients

  • Ice Cream
  • 4 cans coconut milk
  • 3/4 cup powdered sugar
  • Toffee
  • 1 cup granulated sugar
  • 1 cup Earth’s Balance non-butter buttery spread business, mmmm….
  • 2 tspns vanilla extract
  • 1/2 tspn salt

Instructions

  1. To make the ice cream, open your cans and scoop the thick cream part into a bowl, trying to get as little of the coconut water as possible. Discard coconut water or just set aside for chugging later, whatever.
  2. Add the powdered sugar and vanilla to the coconut cream.
  3. Mix on high 2-3 minutes with a hand mixer until it becomes stiff and fluffy.
  4. Set this aside and just let it marinate in itself (it won't hurt a thing) while you make the toffee.
  5. Cover a baking sheet with a sheet of wax or parchment paper. Set aside.
  6. Place all ingredients into a small pot over medium heat.
  7. Stir.
  8. When it’s all melty, keep stirring.
  9. Stir. Stir. Stir. Stir. Stir. Stir.
  10. Forever, stir.
  11. And some more.
  12. When it turns a soft brown, keep stirring.
  13. Ok, if your arm falls off, you can totally take a break–to re-attach the arm, then keep stirring.
  14. Stir while it’s boiling.
  15. Stir for about 20 minutes. But be careful of your spoon--I melted mine and had to start over fresh.
  16. Pour 1/2 in a cup or bowl (I went with bowl--getting it in a cup was daunting since it was so hot--it MELTED A SPOON!).
  17. Then pour the other half on the pan with the parchment paper. Set this pan in the fridge.
  18. Allow the toffee in the bowl to cool to the touch but no longer (about 10 minutes).
  19. Pour this bowl-toffee into your ice cream and stir until well combined.
  20. Separate your ice cream into two bowls.
  21. Add red food coloring to one bowl and black to the other. Stir both until well-combined.
  22. Put the two colors back together into the same bowl in layers side-by-side.
  23. Remove toffee from the fridge (it should be hard after 10 minutes--if its not, put it back in for 10 more minutes and be patient...it's well worth the wait) and break it apart, dropping pieces into the ice cream randomly. STIR SPARINGLY to both mix the colors a little and to get those toffee bits mixed-in.
  24. Place the whole of everything in the freezer for about 2 hours. Or just an hour, if you're super-duper impatient like I am.
