Do you ever wake-up in the morning just knowing it’s going to be a great day? I mean, you have to go to bed first, which is something I’ve been missing the last few nights since my babies have been trading-off with refusing to sleep. Parenthood = Awesome. But Friday…just like TOMORROW? That’s going to be a great day. And I think, just before we head over to that 7:30pm showing of The Force Awakens, we’re going to enjoy a Star Wars Rebel Alliance Chocolate-Covered Strawberry Float. So yummy. Best, most refreshing way to beat-back the dark side. So what if they have cookies. The light side has floats. Heh.

Do you see it in the pics? The little bits of chocolate all up in the strawberry? That’s a little bit of everything-is-awesome right there. Oh, and did I forget to mention that this is a totally dairy-free recipe? Heck yeah. There’s like no milkies and it will not make your tummy hurt at all. Amazing, yeah? I tell ya what, you just make this and, trust me, all thoughts of the dark side will be out of your head. Until Vader shows up at your door with cookies again, but just offer him one of these and he’ll have you calling him Anikin by the last slurp of the straw. Heh.

Star Wars Rebel Alliance Chocolate-Covered Strawberry Float

Star Wars Rebel Alliance Chocolate-Covered Strawberry Float. Best way to up the dark side. So what if they have cookies. The light side has floats.

Ingredients

  • 4 cans coconut milk
  • 1 cup powdered sugar
  • 8-10 fresh strawberries
  • 2 12- oz strawberry sodas
  • 1 cup dairy-free chocolate chips

Instructions

  1. To make the ice cream, open your coconut milk cans and scoop the thick cream part into a bowl, trying to get as little of the coconut water as possible. Discard coconut water or just set aside for chugging later, whatever.
  2. Add the powdered sugar.
  3. Mix on high 2-3 minutes with a hand mixer until it becomes stiff and fluffy.
  4. Slice all but 4 of the strawberries and mash them with a masher.
  5. Fold strawberries and 1/2 cup chocolate chips into the ice cream.
  6. Place in the freezer for approximately 2 hours.
  7. Microwave remaining chocolate chips in a microwave-safe bowl in 30-second increments, stirring between, until chocolate is smooth.
  8. Dip the remaining 4 strawberries in the chocolate and place on a plate.
  9. Put the chocolate-covered strawberries into the refrigerator for approximately 10 minutes or until chocolate hardens.
  10. Place one generous scoop of ice cream into 4 cups.
  11. Pour strawberry soda over each scoop of ice cream.
  12. Top with the chocolate-covered strawberries and serve to your rebels.
